I love cooking on my Blackstone in the summer so much that I’m always coming up with new reasons to use it. This gyro smash burger recipe is the result of my love for outdoor cooking and mediterranean flavors. It’s a fun twist on two classic dishes that my family absolutely loves.

Key Ingredients & Substitutions
- ground lamb – We know that this one can be tricky to find, but it’ll give your smash burger taco that authentic gyro flavor. If you can’t find it, just sub it with some ground chicken or ground beef.
- street taco tortillas – These are the smallest tortilla variety. We went with flour tortillas as we’ve found the corn tortillas tend to fall apart once folded.
- tzatziki sauce – Like any good taco, a hit of fresh and cool sauce makes this recipe. We have a regular tzatziki sauce recipe on the site as well as dairy-free tzatziki sauce.
- fresh veggies – We picked the classic Greek inspired veggies, but feel free to use the ones that you like best.
Prep for Success
The key to success in any smash burger taco recipe is to prep ahead as things move quick! Make the sauce, chop the veggies, heat up your cook-top, and assemble your burger press and parchment paper so that the whole process moves seamlessly.
How To Make Smash Burger Tacos

Pro Tip
If it’s especially warm outside, chill your meat mixture ahead of time. This will help to keep them from sticking to the burger press.

Description
Our flavor-packed Gyro Smash Burger Tacos are perfect for a delicious Blackstone dinner on a summer night!
Ingredients
Lamb Smash Burgers:
- 1 pound ground lamb
- 1 tablespoon fresh mint leaves, chopped
- 1 teaspoon garlic, minced
- 1 teaspoon kosher salt
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried dill
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground black pepper
Toppings:
- 6 flour street taco tortillas
- 1 1/2 cups romaine lettuce, chopped
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup red onion, sliced
- 1/4 cup feta cheese, crumbled
- tzatziki sauce (regular or dairy-free)
Instructions
- Make Burger Balls: Put all of the burger ingredients in a large bowl and mix to fully combine. Divide the mixture into 6 equal-sized balls and set aside.
- Prep Other Ingredients: Make sure you have the tortillas and toppings prepped and ready before starting to cook. The cook time goes super fast, so having everything prepped is a must!
- Cook Patties + Toast Tortillas: Preheat the flat top griddle to a medium-high heat. Place balls on the hot flat top, with enough room in between for smashing. Place a piece of parchment paper on a ball and use a burger press to slowly press down and flatten it as much as you can. Let sit and cook for the next 40 seconds. Flip the burger and put a tortilla on the cooktop next to it. Close the lid and let the burger cook for 1-2 minutes. Continue this process with all the burgers.
- Remove: Open the lid and flip the tortillas over. Use a large spatula to lift a patty and place on a tortilla. Transfer the whole thing to a plate. Continue until all of the smash burger tacos are cooked and placed on a plate.
- Serve: Enjoy all of the tacos with your desired toppings!
Notes
- Dairy Free: use a dairy-free tzatziki sauce and either omit the feta cheese or use a dairy-free alternative.
