It’s no secret that pickles are my new favorite obsession. So if you’re a pickle lover, you’ve come to the right spot. Once you’ve tasted that tangy pickle flavor in this bring summer salsa, you might never want to go back to the original. It’s the perfect snack or appetizer for patio season or anytime you’re hosting a crowd.

What You Will Need
- Claussen Dill Pickle Spears – We’ve heard some rumblings that Grillo’s pickles are all the rage, but we love Claussen’s for their bold flavor and classic, vinegar-based brine. We also have a homemade refrigerator dill pickles that you could try!
- English cucumber, red bell pepper, anaheim pepper, jalapeño, cherry tomatoes, yellow onion – A handful of fresh veggies that make this raw salsa really pop. You could always sub these with white onion, red onion, or green bell pepper.
- fresh dill – A no-brainer when you’re working with pickle flavors.
- garlic – Just a bit to add a depth of flavor. Use a fresh garlic and a garlic press for the best flavor.
- pickle brine – AKA fresh pickle juice for an extra kick of flavor.
- kosher salt and ground black pepper – The original seasonings to allow all of the other natural flavors to shine.
How To Make Pickle De Gallo
Start by gathering and prepping all of your ingredients.

Next, place all of the salsa ingredients into a large mixing bow and mix to combine. Taste and add additional salt to your liking. Serve with your favorite chips and enjoy!

What To Eat With Pickle De Gallo

- Where to buy pickle de gallo – You can sometimes find the store-bought version in the refrigerated section in produce at your local grocery store. This is also where you can usually find traditional pico de gallo.
- Is pickle de gallo relish? Nope. While both have a variety of chopped veggies, they differ in flavor and use. While pickle de gallo is served as a salsa, relish is a condiment that is usually served on hot dogs or burgers. The ingredients in relish are often cooked while pico de gallo ingredients are served raw.

Ingredients
- 2 cups Claussen dill pickle spears, finely diced
- 1 cup English cucumber, finely diced

- 1 tablespoon garlic, minced
- 1 tablespoon pickle brine (more, if desired)
- 1/4 teaspoon kosher salt
- ground black pepper, to taste

Instructions
- Combine: Put all of the ingredients in a large bowl. Give it all a big stir to fully mix everything together.
- Taste: Try the mixture and make any taste adjustments according to your personal preferences (i.e. more salt, pepper, dill, etc).
- Serve: Enjoy by scooping up the pickle de gallo with your favorite tortilla chips!
Notes
- Finely Diced: we highly recommend finely dicing all the components of this pickle de gallo to make it easier to scoop. If you have a Vegetable Chopper, that would work great!
- Prep Ahead of Time: option to mix everything together before serving, but due to the watery nature of some ingredients it is best to not make it too far ahead of time.
- Storage: leftovers can be kept in an airtight container in the fridge to enjoy the next day or two.
