- hard boiled eggs– We have three ways to quickly make a bunch of hard boiled eggs including air fryer hard boiled eggs, hard boiled eggs in the oven, or hard boiled eggs on the stove top.
- dill pickles – When we’re not using our refrigerator dill pickles, we always get Claussen’s Dill Pickles.
- mayonnaise – Get the ultimate flavor by using our homemade whole30 mayo. We haven’t tested this out with Greek yogurt, but just know that the texture will be more dense, which will require thinning with water.
- fresh dill– Some recipes list this as an optional ingredient, but we’re adamant that fresh dill is a must to get the best flavor.
Hard Boiled Eggs 3 Ways
We’ve experimented with different ways to hard boiled eggs and we’ve found that our Instant Pot Hard Boiled Eggs are the quickest and yield the easiest to peel eggs. Air Fryer Hard Boiled Eggs took a little bit longer and hard boiled eggs in the oven took the longest. All resulted in perfectly cooked hard boiled eggs.
How To Make Egg Salad With Pickles

Step 1 – Chop your hard boiled eggs.

Step 2 – Mix together the mayo, seasonings, pickle juice, and mustards in a small bowl.
How To Keep Egg Salad From Getting Watery
Wipe your hard boiled eggs before chopping to remove any moisture that may have settled between the egg and the shell. This will ensure that your egg salad stays fresh and not watery.

Step 3: Add the chopped hard boiled eggs, pickles, onions, celery, and dill in a large mixing bowl.

Step 4: Fold in the mayo mixture into the egg and veggies, top with some fresh dill, and enjoy!
How To Serve Simple Egg Salad With Pickles
We love serving dill pickle egg salad with mayonnaise between to slices of bread, on a croissant, or wrapped up in butter lettuce to make an egg salad sandwich. When we’re in the mood for snacking, we throw out a bowl of this along with our favorite cracker and let everyone dive in.

What We Learned Testing this
Chopped Dill Pickle Salad
- Remove the seeds! To keep your salad as fresh as possible, slice your pickles into spears, and then make a slice lengthwise to remove the strip of seeds near the outermost tip of the pickle spear. This removes excess moisture.
- Fresh Dill! Fresh dill is seriously the way to go.It adds an undeniable freshness that you just can’t get from the dried stuff.

Ingredients
- 12 hard boiled eggs, peeled & diced
- 1 cup dill pickles, chopped & seeds removed
- 1/2 cup celery, chopped
- 1/2 cup mayonnaise
- 1/4 cup white onion, minced
- 2 tablespoons fresh dill, minced
- 1 1/2 tablespoons pickle juice, more, if desired
- 2 teaspoons dijon mustard
- 1 teaspoon yellow mustard
- 3/4 teaspoon celery salt
- 1/2 teaspoon kosher salt, more to taste
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- optional pinch of seasoned salt
- serving suggestion: bread, croissant, butter lettuce, etc.
Instructions
- Put all of the ingredients in a large bowl and toss to fully combine.
- Taste and adjust any seasonings or flavors to your personal preference.
- Serve immediately or store in the fridge for later.
Notes

- Pickles: highly recommend using our Refrigerator Dill Pickles or pick-up a store-bought version (we love Claussen).
- Storage: leftover egg salad can be kept in an airtight container in the fridge for 3-4 days.
