It is a simple noodle salad that has a variety of fresh vegetables, cooked noodles, and a homemade peanut sauce that we know will hit the spot. Perfect for serving up as an easy weeknight dinner or meal prep on Sunday and enjoy the next day or throughout the week. Trust us, you will be making it again and again!

What You Will Need
- natural peanut butter – highly recommend picking up a super creamy peanut butter to make the easy peanut sauce for noodles!
- maple syrup – just a little bit for that touch of sweetness.
- toasted sesame oil, soy sauce, & rice vinegar – essential ingredients for adding the best flavor that we all know and love.
- lime juice & lime zest – this bit of acidity really helps to lighten and brighten all the other flavors.
- water – add as much or as little as you need to help thin the peanut sauce.
- rice noodles – grab the type of noodle that works for you at your local grocery store – brown rice noodles, udon noodles, or even spaghetti noodles.
- kale, carrots, red cabbage, red bell pepper, & chopped green onions – a perfect combination of fresh ingredients that work so well together!
- roasted peanuts – love this added crunch on top.
- fresh cilantro – a fresh herb that is always the best part, in our opinion.
- garnish: sesame seeds or lime wedge for some fresh lime juice.
How To Make Thai Peanut Noodles
The first steps to making this easy recipe are to gather and prep all of the simple ingredients.
Now place all the peanut sauce ingredients in a small bowl and whisk to fully combine. Gradually add a little bit of water at a time to help thin out the creamy peanut sauce.
Next, boil your noodles of choice according to the package directions, drain, and give them a cold water rinse. Pour the creamy sauce over the top in a large mixing bowl.
Toss in all the other basic ingredients and give it a good stir!
Best Way To Serve Thai Peanut Noodles
This amazing peanut noodle recipe is delicious as-written in the recipe card, but there are also a few ways to jazz up this quick meal. You can easily add protein and make Thai peanut noodles with chicken and serve with grilled chicken breasts on top or keep it plant-based with some fried tofu. And if you love spicy food, feel free to add some red pepper flakes or a drizzle of hot sauce.
Storage
Leftover noodles can be stored in an airtight container in the fridge for 3-4 days. Just reheat in the microwave.

A seriously delicious Thai Peanut Noodle recipe that take minimal cooking, is packed with flavor and makes amazing leftovers!
Ingredients
Peanut Dressing:
- 1/3 cup drippy peanut butter* (like Crazy Richard’s)
- 1–2 tablespoons real maple syrup
- 1/4 teaspoon sesame oil
- 1 tablespoon soy sauce (Tamari for gluten-free)
- 1 teaspoon lime juice
- 1 teaspoon lime zest
- 1 teaspoon rice vinegar
- 5–6 tablespoons water to thin
Other Ingredients:
- 7oz rice noodles (we used Thai Kitchen Rice Noodles)
- 1–2 cups fresh kale, chopped
- 1 cup purple cabbage, shredded
- 1/4 cup peanuts, chopped
- 1 cup carrots, julienned
- 1–2 bell peppers, julienned (any color you want)
- 1/2 cup fresh cilantro, chopped
- 1/4 cup green onions, sliced
- sesame seeds for garnish
Instructions
- Make Dressing: Add drippy peanut butter, real maple syrup, sesame oil, soy sauce, lime juice, lime zest and rice vinegar to a small bowl. Whisk to combine – it will be pretty thick. Add 2 tablespoons of water at a time and then whisk again. If the texture looks a bit weird – just continue to whisk and the water will eventually combine with the peanut butter and thin out the dressing nicely. Continue adding 2 tablespoons of water at a time and whisking until you have reached your desired consistency (it took us about 6 tablespoons).
- Cook Rice Noodles: Cook rice noodles according to package instructions. Drain and rinse with cold water.
- Combine: Add noodles, kale, peanuts, carrots, bell pepper, cilantro, green onion and purple cabbage to a large bowl. Top with Peanut Dressing and toss to combine.
- Serve: Serve with sesame seeds for garnish or add more chopped peanuts or cilantro. Enjoy!
Notes
- Peanut-Free: I haven’t personally tested it, but you could probably make a variation of this dressing with a sunflower butter and you can omit the chopped peanuts.
- Gluten-Free: sub Tamari for the soy sauce to make this gluten-free.
