- Why You’ll Love It: These little cups of glittery champagne jello are SO FUN for enjoying with a group of friends at any special occasion. I love the raspberries but any fresh berry could be used. Plus, they only take about 20 minutes to make and then they just chill in the fridge for a few hours. Enjoy these incredible raspberry champagne jello shots!

- edible gold glitter – The perfect way to make these the most festive cocktail. You could also use edible gold leaf, but the whole drink won’t be as sparkly.
- sweet champagne – We used Martini + Rossi Asti. You can purchase one regular sized bottle of champagne and sip on the leftover champagne or pick-up a mini bottle.
How To Make Champagne Jello Shots

Step 1 – Put 2-3 fresh raspberries in each cup.

Step 2 – Sprinkle in some edible glitter.

Step 3 – Put 1 cup of champagne, lemon juice, sugar, & gelatin in a sauce pan.

Step 4 – Whisk to combine and let sit for 5 minutes to bloom.

Step 5 – Bring to a slight simmer & then cool for 5 minutes. Add remaining champagne and vodka; mix to combine.

Step 6 – Divide this mixture evenly between the cups.
Pro Tip
The best way to pour the champagne mixture is to use a vessel with a good pouring spout like a measuring cup. This ensures every last drop will make it into the small plastic cups.

Step 7 – Cover cups and store in the fridge for at least 2 hours or overnight.

Champagne Jello Shots FAQs
This recipe was made with 2.5 oz jello shot cups, which made for 2 bites to get the whole jello shot down. Option to try a different size, but you might need to cut down on the number of berries used.
I only tested this jello shot recipe in portion cups, there’s no reason to believe that they wouldn’t work in other molds. A silicone mold might get tricky to get the jello out smoothly, but give it a try and let us know how it worked!
Sub the champagne for sparkling fruit juice and use cold water in place of vodka.

Ingredients
- 36 fresh raspberries
- edible gold glitter
- 12 portion cups with lids, 2.5oz each
- 1 3/4 cups sweet champagne, we used Martini + Rossi Asti, cold + divided
- 1 tablespoon lemon juice
- 1/3 cup granulated sugar
- 2 (0.25oz packets) unflavored gelatin
- 1/4 cup vodka
Instructions
- Prep Portion Cups: Place 2-3 raspberries in each portion cup. Sprinkle with a pinch of edible glitter. Set aside.
- Bloom Gelatin: Add 1 cup champagne, 1 tablespoon lemon juice and 1/3 cup granulated sugar to a saucepan. Stir to combine. Add unflavored gelatin and stir. Let sit 5 minutes to allow the gelatin to bloom.
- Heat + Cool Mixture: Place saucepan over medium heat and gently heat until gelatin has dissolved and the liquid is just barely about to start simmering. Remove from heat and place in the refrigerator for 5 minutes to cool. Add remaining 3/4 cup cold champagne to saucepan along with a 1/4 cup vodka. Gently stir to combine.
- Pour + Refrigerate: Divide equally between the portion cups pouring over the raspberries and glitter. Transfer to the refrigerator and let set for a minimum of 2 hours. Serve with a spoon and enjoy!
Notes
- Portion Cup Options/Alternatives: we only tested these using the portion cups, but I don’t see why these wouldn’t work in other molds. The only issue I foresee with a silicone option is getting the jello out smoothly – let us know if you try something different!
- Portion Cup Size: each portion cup here was 2.5oz, feel free to use something smaller, just know you may not be able to fit as many raspberries in and you will end up with more shots.
- Non-Alcoholic: want to make a batch for the kiddos or someone who doesn’t want to drink alcohol – simply swap out the champagne for sparkling apple juice and add water instead of vodka.
- Sweet Champagne/Asti: we tested this with a Martini + Rossi Asti and the flavor was perfect – if you use a less sweet champagne you may want to add a bit more sugar to account it.
- Storage: store with the caps on the portion cups in the refrigerator.
- Make Ahead: since these have fruit in them, it is best to eat them within 2-3 days of making.
