How to Make Greek Tortellini Pasta Salad

Step 1 – Cook and rinse cheese tortellini.

Step 2 – Add all pasta salad ingredients to a serving bowl.

If you’re making this salad ahead of time, save some of the dressing to add right before serving as the initial dressing will get soaked into the cheesy tortellini pasta. Greek salad with tortellini will last in the fridge for 3-4 days.

What To Serve With Greek Tortellini Salad
This versatile salad can be served on it’s own to make for a healthy vegetarian meal or alongside one of our many protein options. It would pair well with our Greek chicken meatballs, marinated Greek yogurt chicken, Greek lamb balls, grilled steak, or grilled chicken thighs. Make a double batch to use as an easy side option or for a quick lunch.

Ingredients
- 20 ounces cheese tortellini
- 1 ½ cups English cucumber, half-moons
- 1 pint cherry tomatoes, halved
- 1 cup kalamata olives, whole or halved
- 1 red bell pepper, diced
- 8 ounces feta cheese, crumbled
- ½ can small artichokes, quartered
- ¼ red onion, halved + thinly sliced
- ½ cup Greek Dressing, more as-needed
Instructions
- Cook Tortellini: cook 20 ounces cheese tortellini according to package instructions. Drain and rinse with cold water.
- Combine + Toss: add tortellini, feta cheese, red onion, cucumber, cherry tomatoes, bell pepper, artichokes and kalamata olives to a large bowl. Add dressing and toss to combine.
- Taste + Adjust: Taste and add any additional dressing, as-needed, as well as any salt and pepper you desire. Feel free to garnish with a bit of fresh chopped parsley.
Notes
- *Red Onion: you can also just dice about 1/4 cup – 1/3 cup, if you prefer.
- Extra Dressing: make sure you have a little extra dressing on hand as the pasta will soak it up as it sits. If you make this ahead you will need to add a little extra and toss before serving to freshen it up.
- Greek Dressing: we love our homemade Greek Vinaigrette, but feel free to use store-bought. We love the Primal Kitchen Greek Dressing!
- Storage: Store in an airtight container in the refrigerator for 3-4 days.
