Our Greek Tortellini Salad is simple, flavorful, and will leave you feeling your best thanks to fresh produce, a light dressing, and of course cheese-filled tortellini! Serve it alongside our grilled steak or our Greek chicken thighs for a complete meal.
The Best Greek Tortellini Pasta Salad
Pasta salads work as a great side dish option or, my personal favorite, a main course that I can just pull out of the fridge for a quick lunch or dinner on busy weekdays. Enjoy bites of fresh vegetables like crisp cucumbers, tender tortellini, homemade Greek dressing, along with a whole slew of other in-season produce!
What You Will Need
- cheese tortellini – Pick out your favorite variety from your local grocery store.
- feta cheese – A tangy and creamy cheese that adds flavor and the best texture.
- red onion – Adds a zesty flavor in every bite.
- English cucumber – One of our favorite crunchy veggies. Nothing says spring and summer like a fresh cucumber!
- cherry tomatoes – Just a few little bursts of color and juiciness.
- red bell pepper – We used red, but use your favorite color bell pepper.
- artichokes – We used canned artichoke hearts to make this quick and easy.
- Greek dressing – We love our tangy homemade Greek vinaigrette, but feel free to save time and use a store bought variety.
How To Make a Greek Pasta Salad With Tortellini
Start by prepping and measuring all of your ingredients. A sharp knife, cutting board, and vegetable peeler come in handy here! While you’re prepping your veggies, get a large pot of water on the stove and bring it to a boil. Then cook the tortellini according to the package instructions. Then drain and rinse them with cold water.
Next, Add the tender pasta, feta cheese, red onion, cucumber, juicy tomatoes, and artichokes to a large bowl.
Mix up your homemade dressing and pour it over the top of the salad ingredients.
Recipe Tip:
If you’re making this salad ahead of time, save some of the dressing to add right before serving as the initial dressing will get soaked into the cheesy tortellini pasta.
Toss everything together, give it a quick taste test and adjust salt and pepper as needed, and enjoy!

Instructions
- Cook Tortellini: cook tortellini according to package instructions. Drain and rinse with cold water.
- Combine + Toss: add tortellini, feta cheese, red onion, cucumber, cherry tomatoes and artichokes to a large bowl. Add dressing and toss to combine.
- Taste + Adjust: Taste and add any additional dressing, as-needed, as well as any salt and pepper you desire. Feel free to garnish with a bit of fresh chopped parsley.
Notes
- Red Onion: you can also just dice about 1/4 cup – 1/3 cup, if you prefer.
- Extra Dressing: make sure you have a little extra dressing on hand as the pasta will soak it up as it sits. If you make this ahead you will need to add a little extra and toss before serving to freshen it up.
- Greek Dressing: we love our homemade Greek Dressing, but feel free to use store-bought. We love the Primal Kitchen Greek Dressing!
