The Best Ground Beef Rice Bowl
At our house we love nothing more than making a delicious rice bowl recipe that everyone can build any way they want. There are so many options for to make a flavorful meal that is served all in one bowl. This main dish is also known as a Korean Beef Bowl and will definitely wake-up your tastebuds! Also, a great option to cook on Sunday as meal prep for the week. Simply reheat for a delicious lunch option!

What You Will Need
- olive oil – add a little bit to the homemade sauce and in the pan to sauté the veggies.
- sesame oil & soy sauce – love the unami flavor that these bring to the dish!
- gochujung sauce – the flavor-packed base for the sauce, feel free to adjust the amount to your desired preference.
- rice wine vinegar – adds a wonderfully mild tang to the sauce.
- honey – perfect for a small touch of sweetness!
- fresh garlic & shallot – a good addition for starting all the best flavor.
- fresh ginger – love this light & refreshing ingredient when making any type of stir fry.
- chili garlic sauce – adjust the amount to increase or decrease the level of heat!
- yellow onion, carrots, & zucchini – the fresh veggies that we used but feel free to use what you have on hand. Bell peppers would be delicious too!
- salt & pepper – simple seasonings that are always a must when cooking any type of meat.
- ground beef – we used 80/20 ground beef but option to sub with lean ground beef.
- cooked rice – any variety of rice would work here, like white rice, brown rice, etc.
- eggs – there is nothing better than a soft boiled egg, but a poached or fried egg would also be amazing!
- optional toppings: some sesame seeds, chopped green onions, or red pepper flakes are great for garnish.
How To Make A Ground Beef Rice Bowl
The first steps to making this easy recipe are to gather all of the simple ingredients.
Place all of the gochujung sauce ingredients in a glass jar or small bowl. Cover and shake or whisk to combine.
Now bring a large skillet to medium high heat and add olive oil to coat the bottom. Add carrots to cook for 5 minutes and then the onion and zucchini. Season with a sprinkling of salt and pepper. Remove from the hot pan and set aside.
Add ground beef to the pan, break apart, move around, and cook until browned. Next, add garlic and 1/3 of the sauce to the pan and mix in with the ground beef.
Finally, build your bowl. Rice goes on the bottom, then the veggies, beef, and top with your egg of choice. Plus, a generous drizzle of gochujung sauce!

Ingredients
Gochujung Sauce:
- 2 tablespoons extra virgin olive oil
- 1 teaspoon sesame oil
- 1 tablespoon Gochunjung sauce
- 1 tablespoon rice wine vinegar
- 4 tablespoons soy sauce
- 2 teaspoon honey (sub granulated sugar)
- 2 teaspoons garlic, minced
- 1 tablespoons shallot, minced
- 2 teaspoon fresh ginger, grated
- 1 teaspoon chili garlic sauce
Veggies:
- 1/2 tablespoon extra virgin olive oil
- 1/3 cup sweet yellow onion, diced
- 3 medium carrots; peeled, cut into 1 inch pieces, quartered
- 2 zucchini; trim ends, cut into 1 inch pieces, quartered
- kosher salt and ground black pepper
Ground Beef:
- 1 lb ground beef (80/20)
- kosher salt
- ground black pepper
- 2 teaspoons garlic, minced
Other Ingredients:
- 2–4 cups cooked rice, of your choosing
- 2–4 poached egg, soft-boiled egg, or fried egg
- fresh cracked pepper
Instructions
- Make Sauce: Combine Gochujung Sauce ingredients in a small bowl or mason jar. Whisk and/or shake to fully combine. Set aside.
- Cook Veggies: Bring large cast iron skillet to medium-high heat. Add olive oil; swirl to coat bottom of the pan. Add carrots and move around pan, approx. 5 minutes. Add onion and zucchini (add more olive oil, as needed). Move around pan until zucchini is soft, but firm. Season with salt and pepper. Transfer to bowl; set aside.
- Cook Beef: In the same cast iron skillet add ground beef. Break apart and move around pan until fully cooked. Strain excess grease and return pan to stovetop. Season with salt and pepper and add garlic. Move around until garlic is fragrant. Add approx. 1/3 of the Gochujung Sauce. Stir to combine with the ground beef.
- Build Bowl: Divide rice between either 2 or 4 bowls. Top with cooked veggies and ground beef. Top with poached egg, fresh cracked pepper, and plenty of the remaining Gochujung Sauce.
Notes
- Ground Beef: feel free to use a different ground meat here such as ground turkey, if you prefer.
