Healthy Cucumber Mint Smoothie Bowl – a bright and vibrant green smoothie bowl that is perfect for Spring (and St. Patrick’s Day!)

Are you guys ready for Spring as much as I am! These Healthy Cucumber Mint Smoothie Bowls are the perfect way to brighten up these last few weeks of Winter!
Seriously though, this Minnesota winter is getting to be a little too long. I need green grass and a bright blue sky! I knew I had whip up something that would brighten my spirits and this definitely did it. This bowl is packed with so many greens and fruit, it is perfectly sweet and full of nutrients. I used a splash of Zevia’s Cucumber Lemon Water so it wasn’t too thick and to add some natural sweetener (Zevia is only sweetened with Stevia!). The result was perfection. The clean, yet sweet flavors blend together perfectly!
I don’t have smoothie bowls too often, but when I do I cram as many greens into them as I possibly can (same goes for my kiddos)! It is the perfect way to sneak in leafy greens like kale and spinach that can otherwise be hard to work into your diet. I also love tossing in some ground flax meal or plant-based protein powders if all I am having for breakfast is a smoothie. That is what I love about smoothies, you can really throw any combination together and it always seems to come together and taste amazing!

Description
A bright and vibrant green smoothie bowl that is perfect for Spring (and St. Patrick’s Day!)
Ingredients
- 1 frozen banana
- 1/4 cup cucumber
- 1/4 cup spinach
- 1/2 cup kale
- 1/2 cup pineapple chunks
- 1/2 pear, cut into chunks
- 6 mint leaves
- 1/4 cup Zevia cucumber lemon water
- orange juice
- (note: feel free to freeze ingredients beforehand, except for the Zevia water)
Instructions
- Combine ingredients in blender and blend until smooth.
- Pour into bowl.
- If desired, garnish with cucumber slices, walnuts, sesame seeds and micro greens.
