We are so excited to bring you this cheesy corn casserole that has an amazing combination of sweet corn, sharp cheddar, and a little kick of heat from a chopped jalapeño! This flavor combination is incredible and it could easily be served for anything from Thanksgiving dinner to a 4th of July celebration, potluck, Christmas dinner, or any other special occasions. What You Will Need
- canned whole kernel corn & canned cream-style corn – just pick-up a can of each at your retail grocery stores.
- jiffy cornbread mix – one box of jiffy mix added to this corn mixture gives it a light & fluffy texture.
- unsalted butter – added for that amazing flavor and is the perfect compliment to the sweetness of the corn.
- sour cream – feel free to use regular sour cream or a dairy-free sour cream.
- large eggs – two fresh eggs in the mix will help bind it all together.
- baking powder & kosher salt – a little bit of each to help with the structure of the casserole.
- fresh jalapeño – highly recommend removing the seeds and membranes for a slight heat, but feel free to increase or omit depending on your personal preferences.
- sharp cheddar cheese – everything is always better with some melty cheese added!
How To Make Corn Casserole
The first steps to making this easy recipe are to gather all of the corn casserole ingredients.
Now place all of the ingredients (except for 1 cup of shredded cheese) in a large mixing bowl. Give it a good stir with a wooden spoon so that everything is fully combined.
Next, spray a baking dish with a nonstick cooking spray and pour the corn mixture into the pan. Then bake in a preheated oven for 40-45 minutes of cooking time or until golden brown. Sprinkle the remaining cup of cheese on top and return to the oven for 5 more minutes.
Let cool at room temperature for 5-10 minutes and enjoy!

Ingredients
- 14.75 oz can of sweet corn, drained
- 14.75 oz can of cream style corn
- 1 package of Jiffy Corn Muffin Mix
- 1/2 cup butter, melted
- 1 cup sour cream (or dairy-free sour cream)
- 2 eggs
- 1 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 1 jalapeño, chopped (with seeds and membranes removed)
- 2 cups sharp cheddar cheese, shredded & divided
Instructions
- Prep: Preheat oven to 350 degrees F and spray the inside of a 9×13 baking dish with non-stick cooking spray.
- Casserole Mix: Put the canned corn, creamed corn, corn muffin mix, melted butter, sour cream, eggs, baking powder, salt, chopped jalapeño, and 1 cup of shredded cheddar cheese in a large bowl. Mix to fully combine.
- Bake: Pour the corn mixture into the prepared casserole dish. Place in the preheated oven, uncovered, to bake for 40-45 minutes or until golden brown on top.
- Cheese Topping: Add the remaining 1 cup of shredded cheese on top of the casserole and continue baking for 5 more minutes or until cheese is melted.
- Serve: Let cool slightly at room temperature and then enjoy!
Notes
- Dairy Free: simply use dairy-free sour cream, a plant-based butter, and omit the cheese or use a dairy-free alternative.
- Prep Ahead of Time: option to mix up the corn mixture, pour in a prepared baking dish, cover with aluminum foil or plastic wrap and keep in the fridge until ready to bake. Great option to prep the night before and serve the next day. Highly recommend letting it sit out at room temperature before moving to the oven.
- Spice Level: adding 1 chopped jalapeño without the seeds/membranes adds a very mild heat that is perfect in this casserole. Feel free to add more, if you prefer a higher level of spice!

I made this for the first time as a side for Thanksgiving. It was so easy to make and since I used a smaller pan (because it’s what I had that worked best for transporting the dish), I did have to leave it in for an extra 5-7 minutes. At the end, I did broil the top for 2-3 minutes (because who doesn’t love a crispy top?!) and there were zero leftovers. I’ll definitely be making this again. Thank you for such a delicious recipe!

Would cornmeal work instead of the Jiffy mix?

Hi Ashira! I haven’t tested this just using cornmeal – Jiffy has added leavening agents like baking powder that help fluff it up as well some flour, sugar and salt – so if you did swap them out the result wouldn’t be the same. Hope that helps!
