The Best Mediterranean Chickpea Salad
Over here at The Wooden Skillet we are big fan of Greek salads or any recipes with those classic mediterranean flavors! So, it was time to create an epic chickpea salad that is the perfect for Meatless Monday or any other day of the week. Personally, we love to chop and prep this simple salad on Sunday and divide this simple chickpea salad into lunch containers to enjoy throughout the week!

What You Will Need
- canned chickpeas – one of our favorite pantry staples. This plant-based protein is also known as garbanzo beans.
- kalamata olives – highly recommend these in just about anything, but you could also sub with more standard black olives.
- crisp cucumber – a great addition for that added crunch!
- canned artichoke hearts – just pick-up a can at your local grocery store.
- cherry tomatoes – absolutely love grape tomatoes for their pop of color and freshness.
- bell peppers – we chose a red pepper and orange pepper, but roasted red peppers would also be great.
- red onion – chop a little bit and toss in this fresh salad for that wonderful mild onion flavor.
- fresh dill & parsley – this combination of fresh herbs bring all the best flavor!
- simple vinaigrette – take a few minutes to make an extra virgin olive oil based dressing, like our Greek vinaigrette, buy a store-bought dressing, or any other salad dressing of your choice.
How To Make Mediterranean Greek Salad
The first steps to making this easy recipe are to grab your trusty kitchen knife and cutting board and start chopping all the fresh veggies.
Now, toss all of the salad ingredients in a mixing bowl, give it a good stir, and then drizzle the salad dressing on top.
Store in a mason jar or airtight container to enjoy the next day or serve immediately!
What Pairs Well With Chickpea Salad
There are so many different ways that you can serve up this easy chickpea salad recipe! A few of our favorite ways are with some cooked quinoa or farro to add a grain and even more protein. On top of the salad you can add some tzatziki sauce and a sprinkling of feta cheese! Just adjust the amount of dressing on top, depending how you prefer to serve up the best chickpea salad!

Description
An easy and delicious Herby Mediterranean Chickpea Salad recipe that is perfect for meal prep or a bright side dish!
Ingredients
- 15oz can chickpeas, drained and rinsed
- 1 cup kalamata olives, halved
- 2 cups english cucumbers, diced
- 15oz can tender, small artichoke hearts, diced
- 1–2 cups cherry tomatoes, halved
- 1 orange bell peppers, diced
- 1 red bell pepper, diced
- 1/4 cup red onion, diced
- 1/4 cup fresh dill, minced
- 1/4 cup fresh parsley, minced
- 1/2 – 1 cup greek vinaigrette (homemade or store-bought)
- (optional for serving) feta cheese (reg. or dairy-free), cooked quinoa or farro, tzatziki sauce
Instructions
- Combine: Add chickpeas, kalamata olives, english cucumber, artichoke hearts, cherry tomatoes, bell peppers, red onion, dill and parsley to a large bowl. Toss to combine.
- Taste + Dressing: Add in 1/2 cup of Greek vinaigrette and toss to combine. Taste and add another 1/2 cup or so, depending upon personal preference.
- Serving: Serve immediately alone or with some quinoa and tzatziki sauce OR divide into meal prep containers and have for lunch or dinners for the coming weeks!
Notes
- Greek Vinaigrette: we have an amazing Greek Vinaigrette recipe on the site, but I genuinely love grabbing a bottle of Primal Kitchen Greek Vinaigrette to save time!
- Make Ahead: this is a great recipe to make ahead for lunches for the week!
- Feta Cheese: the feta cheese can definitely be added in immediately, even if meal prepping, but I just prefer to add it when serving – totally up to you!
- Salt: I didn’t find this recipe needed much salt, but feel free to add a sprinkle if you want – just know that the salt will pull out some of the juices from the tomato, leaving the salad a bit more watery.
