- Ground Pork – traditionally found in many different types of dumplings, but feel free to swap it out for ground chicken or another ground meat of your choosing.

How To Make Smash Dumpling Tacos

Step 1 – Mix up the sauce and cabbage slaw in separate bowls. Set aside.

Step 2 – Put all of the pork mixture ingredients in a bowl and mix to combine.

Step 3 – Divide the meat mixture into 6 equal-sized balls.

Step 4 – Place each ball on a preheated flat top griddle.

Step 5 – Place a piece of parchment paper on one ball and press down firmly with the burger press.

Step 6 – Peel off the parchment paper. Repeat steps 5 & 6 with all of the pork balls. Let them cook for 40 seconds.

Step 7 – Flip the pork patties and set a street taco tortilla next to each one. Let cook for 1-2 minutes.

Step 8 – Flip one tortilla over and place a fully cooked pork patty on top. Transfer to a plate. Repeat with all of the smash tacos.

Step 9 – Add some cabbage slaw on top of each smash taco.

Step 10 – Enjoy right away with the dipping sauce.

Smash Dumpling Taco FAQs
I have always used flour street taco tortillas because they are the perfect size and I prefer them over the taste of corn tortillas. Corn tortillas would work, just make sure you get ones that are a similar size to the street taco tortillas.
These viral smash dumpling tacos can easily be made in a skillet on the stove top, if you do not have a Blackstone. They will need to be cooked in batches and might take a little longer, but it will work!
Yes, leftovers can be stored in the fridge but I highly recommend eating them right after cooking to prevent them from getting soggy.

Ingredients
Dipping Sauce:
- ยฝ cup soy sauce, sub tamari for gluten-free
- 2 tablespoons green onions, thinly sliced
- 4 teaspoons garlic, minced
- 4 teaspoons rice vinegar
- 4 teaspoons honey
- 2 teaspoons ginger, grated
- 1 teaspoon sesame oil
- 1 teaspoon garlic chili sauce
- optional red pepper flakes
Cabbage Slaw:
- ยฝ cup green cabbage, thinly sliced
- ยฝ cup matchstix carrots
- ยผ cup fresh cilantro, chopped
- ยผ cup green onions, sliced
Pork Mixture:
- 1 pound ground pork
- ยผ cup green onions, minced
- 1 tablespoon fresh cilantro, minced
- 2 teaspoons garlic, minced
- 1 teaspoon garlic chili sauce
- ยฝ teaspoon kosher salt
- โ teaspoon ground black pepper
- 1 tablespoon extra virgin olive oil, for cooking only – do not add to meat mixture
Other Ingredients & Tools:
- 6 street taco tortillas

Instructions
- Make Sauce: Put all of the dipping sauce ingredients in a small bowl; whisk to combine. Set aside.
- Make Slaw: Put all of the Cabbage Slaw ingredients in a mixing bowl and toss to combine. Set aside.
- Make Burger Mixture: Add all of the burger ingredients to a large bowl and mix to combine. Divide the mixture into 6 equal-sized balls and set aside.
- Prep Other Ingredients/Tools: Be sure to have the burger balls, parchment squares, and burger press ready to bring out to theย Blackstone griddleย (or use a large cast iron skillet or a flat-top insert for the grill). The cook time goes super fast, so having everything ready-to-go is a must!
- Cook Smash Tacos: Preheat flat top griddle to a medium-high heat. Add 1 tablespoon extra virgin olive oil and spread around the cook top. Place the burger balls on the hot cooktop with a parchment square on top, then use the burger press to flatten the patties as much as you can. This will take about 15-20 seconds per patty. Let sit and cook for 40 seconds. Flip the burgers. Place the tortillas on the cook top next to each patty. Close the lid and let burgers cook for about 1-2 minutes. Open lid and flip tortillas over on the griddle. Use a large spatula to lift each patty and place one on top of a toasted tortilla. Transfer to a plate.
- Assemble: Divide the cabbage slaw between the 6 smash tacos.
- Serve: Enjoy right away with a small dish of the dipping sauce!
Notes
- Gluten-Free: use tamari instead of soy sauce and use gluten-free tortillas.
- Meal Prep: option to make the sauce, slaw, and burger balls ahead of time. Store each in a separate airtight container in the fridge for a super fast cooking dinner that will take less than 10 minutes!
