The Best S’mores Cookie Skillet
During those warm summer months, you will frequently find our family huddled around a campfire making s’mores! They are a classic summertime dessert that it always a family favorite. We decided to use the same great flavors and bring them to a cookie skillet (a.k.a. pizookie). This fun twist has quickly become a big hit at our house and we know it will also be a crowd pleaser at your next family gathering, 4th of July celebration, or backyard cookout!

What You Will Need
- butter – always a staple ingredient for any baked dessert recipe!
- granulated sugar & brown sugar – love this combination of sweetness in this skillet cookie.
- vanilla extract – just a little bit for that added flavor.
- fresh eggs – these whole eggs help to bring everything together and add some structure.
- all-purpose flour – the base of the dry ingredients.
- baking soda & kosher salt – toss in a little bit of both to bring some added structure to the baking process.
- chocolate bar – highly recommend breaking apart those classic Hershey chocolate bars, but any chocolate bars or chocolate chunks would work here.
- graham crackers – just pick-up some honey graham crackers from your local grocery store.
- marshmallows – option to use regular marshmallows or sub for about a cup of mini marshmallows.
How To Make A S’mores Cookie Skillet
The first steps to making this easy recipe are to gather all of the simple ingredients.
Place the softened butter and sugars in a large bowl. Beat butter with the sugar until fully combined.
Add the eggs and vanilla extract. Beat again to fully incorporate.
In a separate mixing bowl, whisk together the flour, baking soda, and salt. Next, add the dry ingredients to the wet ingredients.
Then fold in the pieces of chocolate and graham crackers.
Spread a little over half of the batter in the bottom of an oven-safe skillet, add the marshmallows on top, and then plop the rest of the cookie batter on top.
Substitutions
- Marshmallows: we tested this recipe with regular marshmallows and mini marshmallows. Either size will work great. The recipe card below notes 16-18 regular, large-sized marshmallows or sub for 1 1/4 cups of mini marshmallows.
Place the entire skillet in the oven to bake at 350 degrees F for 22-27 minutes.
Pro Tip
In our opinion, there is nothing better than a slightly under cooked cookie – yum! The center of this cookie skillet will definitely stay a bit gooey, if you prefer a less gooey cookie we suggest baking for closer to 27 minutes of cook time and let it cool for a while after taking it out.

Description
An absolutely epic summer dessert! This S’mores Cookie Skillet recipe is easy to make and perfectly indulgent. Perfect for cookout or get-together!
Ingredients
- 12 tablespoons butter, softened (plus extra for skillet)
- 1/2 cup granulated sugar
- 1 cup brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 1/2 cup all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup Hershey chocolate bar, broken into small chunks
- 1 cup graham crackers, broken into small chunks
- 16–18 full-sized marshmallows
Instructions
- Preheat oven to 350 degrees F.
- Rub a 10-12 inch, deep cast iron skillet with softened butter to lightly coat. Set aside.
- In the bowl of a stand mixer (or large bowl with an electric hand mixer), beat together butter with granulated sugar and brown sugar until smooth. Add eggs and vanilla extract and beat until just barely combined.
- In a separate bowl combine flour, baking soda, and salt. Add the flour mixture to the egg mixture and combine. Fold in the chocolate chunks and graham cracker chunks.
- Pour out 1/2 of the cookie dough into prepared cast iron skillet. Top with the marshmallows and then the rest of the cookie dough (you won’t be able to spread it nicely over the marshmallows so just large scoops will be fine) – try and cover the marshmallows as much as you can with just little bits peeking out. Place in oven, middle rack, and let bake 22-27 minutes or until the edges start to turn light golden brown.
- Remove from oven and let cool before serving.
