The perfect summer recipe for when it is too hot to cook! It takes minimal effort, it is made with delicious summer produce and you don’t need to heat up your oven. My favorite part though, is the beets! I absolutely LOVE their flavor and how it melds with the tomatoes and tomatillos – you guys are going to absolutely love it! Plus, did you guys know that beets are packed full of amazing nutrients like folate, betaine and silica? All the more reason to add them to all your fresh salads!

What You Will Need
- beets – option to keep it simple and pick-up some cooked beets at your local grocery store or make your own homemade beets.
- heirloom tomatoes, tomatillos, & cherry tomatoes – a combination of fresh tomatoes that go so well together and with the beets.
- fresh basil – a fresh herb that we always have bursting out of the garden at this time of year!
- olive oil – the perfect simple salad dressing that goes with anything.
- salt and pepper – simple seasonings that are always a must!
How To Make A Vegan Beet Salad
The first steps to making this easy recipe are to grab a sharp knife and cutting board. Then start slicing all of the fresh vegetables.
Assemble all of the fresh ingredients on a large plate or platter.
Sprinkle with salt and pepper. Then give it a good drizzle of olive oil over the top of the salad.

Ingredients
- 2 cooked beets, sliced
- 1 large heirloom tomato, sliced
- 2 tomatillos, sliced
- 1 pint cherry tomatoes, halved
- Approx. 10 fresh basil leaves
- extra virgin olive oil
- kosher salt and ground black pepper
Instructions
- Take a large platter and arrange large heirloom tomatoes, beets, tomatillos and then cherry tomatoes.
- Sprinkle with some salt and pepper.
- Drizzle with olive oil.
- Serve immediately.
Notes
- Dressing: we kept it simple with olive oil, salt, and pepper, but feel free to use your favorite salad dressing.
