What You Will Need
- puff pastry dough – just pick-up your favorite store-bought puff pastry sheet from your local grocery store! If you pick a frozen puff pastry, be sure to fully thaw before using.
- brie cheese – we used a classic round wheel of brie cheese for this basic recipe.
- jam – any variety of jam or jelly would work in this perfect appetizer.
- large egg – the outside of the puff pastry needs just one egg for an egg wash to give it a golden brown color.
How To Make Baked Brie in Puff Pastry
The first steps to making this easy recipe are to gather all of the ingredients.
Now, use a sharp paring knife to remove the rind around the outside of the cheese. The top rind of the cheese can simply be scored by making shallow, horizontal slices one way and then vertical lines in the opposite direction. Place this prepared, soft cheese on top of the pastry sheet, after trimming off the excess dough. Spread the jelly on top of the cheese.
Next, fold each corner of the flaky puff pastry crust towards the center. Be sure to cover the whole all of the cheese and jam to help prevent the melted cheese from leaking out during the baking process. Brush the outside of the wrapped cheese with the egg wash. Bake at 375 degrees F for 35-40 minutes on a sheet pan.
Transfer the baked brie to a serving platter at room temperature and enjoy!

This super simple baked brie can be enjoyed all by itself with fresh produce, like a side of fresh grapes, apple slices, or pears. - Do you cut the rind off brie before baking? In order to get that delicious melty cheese, we recommend cutting off the outer edge and scoring the top of the cheese. We tested this recipe by leaving the rind in tact and it made it hard to eat the cheese.
- What jam goes best with brie? In the recipe card and photos below, we used red currant jam but feel free to use a hot pepper jelly, fig jam, raspberry jam, apricot jam, another sweet jam, or even some homemade cranberry sauce.
- How long do you bake puff pastry in the oven? Around 35-40 minutes of cook time at an oven temperature of 375 degrees F or until nice, golden brown on the outside.

Our easy Baked Brie recipe is an absolutely delicious appetizer that is perfect for your next holiday party! Everyone will love it!
Ingredients
- *13oz puff pastry, trimmed
- 8oz brie cheese
- 1/2 cup jelly
- 1 egg, beaten
- serving suggestions: crostini, crackers, fresh thyme, red grapes
Instructions
- Prep: Preheat the oven to 375 degrees F. Remove the brie from the packaging. Use a sharp knife to cut off the hard edge around the brie. Then score the top by making horizontal slices and then vertical slices to make a criss cross pattern, about 1/4 inch into the top, set aside.
- Puff Pastry: Roll out the puff pastry with a rolling pin and trim to be about 8×9 inches on a baking sheet.
- Brie & Jam: Place the prepared brie cheese in the center of the puff pastry. Cover the top of the cheese with your jelly of choice.
- Prep to Bake: Fold the edges of the puff pastry over the cheese and jelly, covering it entirely. Put the beaten egg in a small bowl and use a basting brush to brush the outside of the puff pastry with the egg wash.
- Bake: Place the sheet pan in the preheated oven to bake for 35-40 minutes or until golden brown.
- Serve: Transfer to a serving platter and enjoy by itself, with crostini, crackers, etc.
Notes
- Jelly: we used a red current jelly and it was delicious, but feel free to use any of your favorite varieties of jelly or jam.
- *Puff Pastry: we couldn’t find a smaller pre-packaged puff pastry – we do trim it down quite a bit, so it doesn’t overwhelm the brie, if you can find a smaller option then go ahead and try that – otherwise we trim this down to approx. 9 x 8 inches.
