No one can resist warm and melty cheese encased in a flakey crescent dough cup, topped with sweet jam and rosemary. In other words, this is what holiday appetizers are made of. What You Will Need
- store-bought crescent rolls – One of our favorite ways to get flakey crescent dough on the table in no time.
- brie cheese – A creamy, soft cheese that melts perfectly.
- jam – Choose your favorite flavor! We used blackberry.
- fresh rosemary or thyme – Chef’s choice! Choose the one that reminds you of the holidays.
How To Make Baked Brie Bites
Start by preheating your oven to 350° F and gathering your ingredients. There’s nothing worse than starting a recipe and realizing half-way through that something is missing. We’ve been there!
Next, roll out the crescent dough on a clean surface and gently pinch together the seams to make one giant crescent sheet. Then use a sharp knife or pizza cutter, cut the dough into twelve equal sized squares.
Prep your brie cheese by cutting off the outer rind. While this is edible, keeping it all on the cheese will keep your cheese from melting properly (and can taste a little bitter). Once you’ve taken off some of the rind, cut the cheese into 12 equally size wedges.
Next, carefully place the squares of crescent dough into greased muffin tins. Then place a wedge of cheese into each dough cup, followed by a dollop of your preferred jam.
Now pop those babies on the middle rack of your preheated oven and let them bake for around 12 minutes or until the dough has turned a lovely golden brown color.
Remove them from the oven and add your preferred garnish of thyme or rosemary and let them sit for about 5 minutes.
Gently pop them out of the muffin tin using a small butter knife or a fork and enjoy!

Yes! Just pop them in the microwave at 50% for a few seconds and you should be good to go – you can also reheat in the oven (covered) at 350 degrees F. for approx. 5 mins (or until they warm through).
Yes! However, too much can make your cheese tough, which is why we recommend removing some from the outside edge.

Ingredients
- (2) 8oz packages store-bought crescent rolls
- 8oz brie cheese
- approx. 1 cup your choice of jam
- garnish: fresh rosemary or thyme
Instructions
- Prep: Preheat oven to 350 degrees F. Prepare a muffin tin by spraying with your favorite non-stick cooking spray. Spread out crescent roll dough and pinch together seams. Use a pizza cutter to cut into 12 equal-sized squares. Cut off the outer rind from the brie cheese and discard (you can leave the top and bottom). Cut the brie into 12 equal-sized pieces.
- Layer: Taking one piece of crescent roll dough at a time, place over top an empty muffin tin and gently press down so the dough creates a cup. Repeat until all 12 muffin tins are filled. Place a piece of brie cheese inside each muffin tin and top with a dollop of jam.
- Bake: Place in oven and bake, middle rack, until golden brown (approx. 11-13 minutes).
- Garnish: Remove and add a small rosemary or thyme garnish.
- Serve: Let sit 5 minutes. Pop out gently with a butter knife or fork. Serve and enjoy!
Notes
- Jam: we used Bonne Maman Blackberry Preserves, but feel free to use cranberry sauce, blueberry, raspberry, strawberry, peach, etc.
- Reheat: we popped them in the microwave at 50% for a few seconds and it worked perfectly!
- Brie Cheese: we only suggest cutting off the outer edge of the rind to remove some of the toughness, but feel free to leave it OR remove all of it – really a personal preference.
- 350 vs. 375 degrees F: we tested these at both 375 and 350 degrees F. – both turned out – if you do end up baking them at 375 degrees F, then start checking them around the 9 minute mark. At 350 degrees F, they were softer and fluffier, while 375 resulted in the top parts being a little less soft. Again, either temp will work just adjust the cook time accordingly.
- Crescent Roll Dough vs. Puff Pastry: we only tested this using crescent roll dough, but you could definitely achieve a similar outcome using pieces of puff pastry in a similar manner – simply adjust the cook time, as needed.
