Okay whoa. Yes, these are vegan. No, I have “become vegan” overnight . Yes, I also provide alternatives in the recipe if you don’t want to use coconut butter in your frosting cause hey, real butter-cream frosting is flipping amazing and if that is what you want on your donut – by all means – do what the heart wants.
All that being said, there are certain times where I love having vegan options and I just feel better when I eat that way (hello – milk allergy here). So, there may be some more experimenting on the blog in the coming months with more vegetarian/vegan options. With a fair amount of delicious recipes featuring all different sort of proteins. Don’t worry!
As I have mentioned several times over that past couple months, I have just been gravitating towards more health-conscious recipes lately and trying to focus on my general health and wellness. Our lives are so busy these days with works, kids, spouses, friends, housework, blogs….. we all find so little time to just spend taking care of …. us. Self-love, self-care, eating “real” food …. we are all too busy for it. And that sucks. I can’t create more time, but I can make a concerted effort to make “me” a priority and to make eating really good, healthy food a priority for me and my family. And that overflows in to using household products, skincare products and (of course) food products that contain ingredients that I can pronounce, that are nutritious and that are not full of weird chemicals. I have been trying out a variety of different natural products lately and I LOVE them.
Example : I recently bought some skincare from Franklin and Whitman (not sponsored) – their products are all-natural, plant-based and I am now a little obsessed. Looking at their ingredients and knowing how much better I feel, how much better my skin feels – it makes me wonder what is in all the other skincare products I have been using on my face for the last however many years. And then it makes me wonder about all the other products in my house…… yikes. It’s something that I plan on exploring more on the blog in the coming months and I am really excited to share what I learn with all of you!!
Anywaaaaaay. Can we talk about these glorious pink donuts? Well, actually they are chocolate donuts with beautiful pink frosting and I LOVE them!
So there are beets in the donuts too…. yup. Chocolate beet donuts. With beet frosting.
And they are freakin amazing.
I swear you can’t even taste them. All you taste is a wonderful chocolate cake donut with dreamy pink frosting – and aren’t they perfect for Easter! I mean, come on. I hope you guys like them and I hope you like the vegan/non-vegan options for the frosting!
Our little family has a bit of a tradition to splurge and have donuts on Sunday morning and I really wanted to make a donut I felt okay letting my daughters eat —– I am totally okay if they scarf down one of these.

Description
An absolutely delicious version of your favorite breakfast item that is flavored and colored with the wonderfully nutritious and bright beets!
Ingredients
DONUTS:
- 3/4 cup all-purpose flour
- 1/8 cup ground flax meal
- 1/2 cup coconut sugar
- 1/4 cup cocoa powder
- 2 Teaspoons baking powder
- 1/2 Teaspoon baking soda
- 1/4 cup almond milk
- 1 Teaspoon vanilla extract
- 1/4 cup melted coconut oil
- 1/2 cup beet puree
- 1 Tablespoon maple syrup
COCONUT BUTTER CREAM FROSTING:
- 2 cups powdered sugar
- 1/2 cup coconut butter or unsalted butter
- 1 Teaspoon vanilla extract
- 1 Teaspoon almond milk
- beet juice
Instructions
DONUTS:
- Preheat oven to 350.
- Take a beet and peel the outside.
- Roughly chop the beet and place in food processor or blender.
- Add water about 1 Teaspoon at a time until there is enough liquid to allow the blender to create a puree.
- In stand mixer, sift flour, cocoa powder, coconut sugar into the mixing bowl and then add the flax, baking powder and baking soda.
- Fluff with whisk attachment.
- In medium mixing bowl, add almond milk, vanilla, coconut oil and maple syrup.
- Mix thoroughly.
- Add the wet ingredients to the mixer and mix on medium until thoroughly combined,
- Keep the mixer going and slowly add 1/2 cup of the beet puree.
- Take donut pan and lightly spray.
- Scoop donut mixture into the pan until evenly distributed.
- Bake for 12-15 minutes.
- Let cool on cooling rack.
COCONUT BUTTER CREAM FROSTING:
- In medium mixing bowl, combine powdered sugar, vanilla and coconut (or regular) butter and mix with a hand mixer.
- Teaspoon at a time, add beet juice from the remaining beet puree to the frosting and continue to mix.
- Stop adding beet juice when the desired consistency and color is reached.
- Once donuts are cooled, frost and sprinkle with extra powdered sugar.
- Store in air-tight container on counter-top for 2-3 days.
