
By now you know that we LOVE cooking outside on our Blackstone griddle! After perfecting the original Smash Burger and then a Turkey Smash Burger, we knew it was time for a chicken version. And since BBQ chicken sandwiches are one of our favorites, we thought this fun spin would be delicious… and it is! So many fresh flavors coming together for a summer classic. We will definitely be making them on repeat!

Key Ingredients + Substitutions
- Ground Chicken – love these lean meat, but ground turkey would also work here!
- BBQ Sauce – we highly recommend our homemade BBQ sauce, it is delish! But if you are short on time, any of your favorite store-bought versions would be great too.
- Toppings – feel free to use your favorite burger toppings. Quick pickled onions would also be really good.
- Buns – option to use regular hamburger buns, gluten-free buns, or even a lettuce bun!
How To Make A BBQ Chicken Smash Burger

Pro Tip
Due to the sticky nature of ground chicken, we highly recommend that put the sheet pan of burger balls in the freezer for about 15 minutes before cooking. This will cut down on the stickiness and gives you time to get everything else ready to go!



Best Ways To Serve BBQ Chicken Smash Burgers
Our favorite toppings for this smash burger are the crispy bacon, red onion slices, fresh cilantro, and a generous drizzle of BBQ sauce. These can obviously be swapped out for any of your favorites. And the burgers would go great with some Creamy Coleslaw or Herbed Butter Boiled Potatoes on the side!

Description
Our saucy and delicious BBQ Chicken Smash Burgers are perfect for a burger night at home during the warm, summer months!
Ingredients
Chicken Burgers:
- 1 pound ground chicken
- 1/4 cup white onion, shredded & moisture squeezed out
- 2 tablespoons butter, shredded
- 2 tablespoons mayo
- 2 tablespoons parmesan cheese, finely shredded
- 2 teaspoons garlic, minced
- 1 teaspoon worcestershire sauce
- 1 teaspoon kosher salt
- 1 teaspoon dijon mustard
- 1/2 teaspoon lemon zest
- 1/4 teaspoon ground black pepper
Buns & Toppings:
- 2 or 4 hamburger buns
- 1–2 tablespoons butter, room temperature (regular or plant-based)
- bacon slices, halved
- 4 slices of white American cheese
- red onion slices
- fresh cilantro, chopped
- BBQ sauce
Instructions
- Make Burger Balls: Put all of the burger ingredients in a large bowl. Mix to fully combine. Divide the burger mixture into 4 equal-sized balls. Place them on a parchment-lined baking sheet and set in the freezer for 15 minutes.
- Prep Other Ingredients: Butter both sides of the hamburger buns. Have the cheese and toppings prepped and ready because the cook time will go very fast.
- Cook Bacon: Bring the Blackstone griddle to a medium-high heat. Add the slices of bacon and cook to your desired crispness; 3-4 minutes or more. Move bacon off to the side. Scape off most of the excess grease, leaving a little bit to cook the burgers in.
- Cook Burgers + Toast Buns: Remove the burger balls from the freezer. Keep the griddle at a medium high heat and place the burger balls on top. Place a parchment paper square on top of one burger and use a burger press to slowly push down and flatten until the patty is roughly 1/4 inch thick. Continue this process with the other burger balls. Let them sit and cook for about 40 seconds. Flip and add a slice of cheese to each smash burger. Put the buns, buttered sides down, on the cooktop next to them. Close the lid and let them cook for 1-2 minutes (the buns may need to be removed before the burgers). Remove all the burgers and toasted buns.
- Serve: Place a smashed burger patty on a toasted bun and add all your desired toppings! Option to make 2 double burgers or 4 single burgers.
Notes
- Gluten Free: option to use gluten-free hamburger buns!
- Dairy Free: simply use a plant-based butter and either omit the parmesan cheese and cheese slices or use dairy-free alternatives.
- Don’t Have a Blackstone? No problem! These smash burgers could also be cooked in a cast iron skillet on the stovetop. You might want to use two skillets, in order to toast the buns, but it can easily be done.
