This is a perfect salad for holiday gatherings or when you’re looking to impress a crowd. Mild shaved brussel sprouts soak up all the seasonal flavors from bacon, apples, seasonings, and our homemade citrus champagne vinaigrette. And it’s a great way to get a bunch of fresh produce on the table all in one dish.

What You Will Need
- champagne vinegar – Adds a sweet, light, and crisp taste.
- extra virgin olive oil – A mild flavored oil to help spread out all of those flavors in this creamy dressing.
- dijon mustard – A vibrant addition that adds a punch of flavor.
- sweet yellow onion –
- lemon zest & fresh lemon juice – Helps to brighten the entire dressing.
- orange zest & concentrate

- parmesan cheese – We love this salty cheese for its mild but nutty flavor.
- dried cranberries – A pop of sweetness!
- cooked bacon – Make a double batch for breakfast and save the rest for the next day when you start building this salad!
- pepitas – Also known as pumpkin seeds. You could always sub these with sunflower seeds if those are more readily available.
- apples – Use whatever variety you prefer!
- pomegranite seeds – Adds a burst of tart sweetness!

Start by gathering and prepping all of your ingredients.
How To Shave Brussel Sprouts For Salad
Start by removing the outer leaves of each brussel sprout and then slice off the hard end. And as far as slicing goes, you could always use your trusty mandolin, but just be sure to wear protective gloves to save those fingertips. You could also just use a nice sharp chef’s knife and slice them as evenly as you can. Or some grocery stores sell pre-shredded brussels sprouts.
Next, make the dressing! Add all of the vinaigrette ingredients into a food processor and blend until smooth.
Find your prettiest holiday serving bowl and fill it up with your shredded sprouts and the rest of all of those yummy salad ingredients. When you’re ready to serve, top it with your homemade dressing, toss, and dig in to this easy brussels sprout salad!

Our light and refreshing Brussel Sprout Salad recipe is the perfect side dish for your next holiday, family gathering, or any other special occasion!
Ingredients
Citrus Champagne Vinaigrette:
- 1/4 cup champagne vinegar
- 1/2 cup extra virgin olive oil
- 1 teaspoon dijon mustard
- 2 tablespoons sweet yellow onion, minced
- 2 teaspoons lemon zest
- 2 teaspoons lemon juice
- 2 teaspoons orange zest
- 2 teaspoons orange juice concentrate
- 2 teaspoons garlic, minced
- 1 teaspoon fresh thyme
- 1/2 teaspoon kosher salt
- 1/8 ground black pepper
- 1 teaspoon honey
Salad:
- 1 pound fresh brussel sprouts, shaved (about 4 cups)
- 1/2 cup parmesan cheese, shaved
- 1/2 cup dried cranberries
- 4 slices of cooked bacon, chopped
- 1/4 cup pepitas
- 2 honey crisp apples, chopped
- 1/3 cup pomegranate seeds
Instructions
- Dressing: put all the dressing ingredients in a small food processor or blender and blend on high until fully combined.
- Build Salad: put all the salad ingredients in a large bowl and mix to combine.
- Toss with Dressing: pour the dressing over the top of the salad and toss to coat. Taste and make any adjustments, as needed.
- Serve: enjoy immediately!

- Salad Ingredients: feel free to adjust any of the salad ingredients according to your own personal preferences.
- Make Ahead: this is a great salad to prep ahead of time – just cut the apples right before serving so they don’t turn brown and don’t add any dressing before serving (or things will get soggy).
