How To Shave Brussel Sprouts For Salad
Start by removing the outer leaves of each brussel sprout and then slice off the hard end. The quickest and safest way to slice brussel sprouts is with a food processor using the slicing blade. Alternatively, you can slice them manually using a mandoline slicer or a sharp knife. Be sure to use some cut resistant gloves if using the mandoline!

Step 1: Add all of the vinaigrette ingredients to a food processor.

Step 2: Blend until smooth.

Step 3: Assemble salad.

Ingredients
Citrus Champagne Vinaigrette:
- 1/4 cup champagne vinegar
- 1/2 cup extra virgin olive oil
- 1 teaspoon dijon mustard
- 2 tablespoons sweet yellow onion, minced
- 2 teaspoons lemon zest
- 2 teaspoons lemon juice
- 2 teaspoons orange zest
- 2 teaspoons orange juice concentrate
- 2 teaspoons garlic, minced
- 1 teaspoon fresh thyme
- 1/2 teaspoon kosher salt
- 1/8 ground black pepper
- 1 teaspoon honey
Salad:
- 1 pound fresh brussel sprouts, shaved (about 4 cups)
- 1/2 cup parmesan cheese, shaved
- 1/2 cup dried cranberries
- 4 slices of cooked bacon, chopped
- 1/4 cup pepitas
- 2 honey crisp apples, chopped
- 1/3 cup pomegranate seeds
Instructions
- Dressing: put all the dressing ingredients in a small food processor or blender and blend on high until fully combined.
- Build Salad: put all the salad ingredients in a large bowl and mix to combine.
- Toss with Dressing: pour the dressing over the top of the salad and toss to coat. Taste and make any adjustments, as needed.
- Serve: enjoy immediately!

- Shaved Brussel Sprouts: Buy pre-shaved brussel sprouts or use a mandoline or the slicing attachment to your food processor.
- Salad Ingredients: feel free to adjust any of the salad ingredients according to your own personal preferences.
- Make Ahead: this is a great salad to prep ahead of time – just cut the apples right before serving so they don’t turn brown and don’t add any dressing before serving (or things will get soggy).
- Dairy Free: omit the parmesan cheese or swap with a dairy-free alternative.

This looks delicious! Do you think another green leafy would work here; shredded brussel sprouts seems like a lot of work. Also, what seasoning makes your pepitas look so appetizing? Yum!

Hi Lacy – some stores have pre-shredded brussel sprouts, so I would check there first – and if you use a mandoline it really isn’t too hard. BUT if you still want to use something else, you can use a chopped romaine if you want, just definitely serve the dressing on the side so the lettuce doesn’t wilt (something you don’t have to worry about too much with brussel sprouts). Fro the pepitas we might have used a honey-roasted pepita here!
