Key Ingredients
Be sure to see the recipe card below for a full listing of ingredients, instructions, and estimated nutritional information.

- fresh Brussels sprouts – We like smaller sprouts as they tend to cook quicker and are more tender than the larger variety.
- olive oil – Just a bit to help add moisture to this easy recipe.
- kosher salt & ground black pepper – The classics are the best way to bring out so much flavor in this favorite veggie.
How To Make Grilled Brussel Sprouts

Step 1: Preheat your grill to medium-high heat and place your grill basket on the grill to heat it up. Then prepare the sprouts by removing the loose leaves on the outer layer, trim off the stem, and half them with a sharp knife.

Step 2: Next, place your prepped sprouts in a large bowl and drizzle them with olive oil, salt, and pepper. Use your hands to massage the oil and seasonings into the sprouts, making sure to cover them completely.
Recipe Tip: No Grill Basket?
If you don’t have a grill basket, use a piece of foil to create a homemade “basket” by folding up the sides.

Step 3: Pour out the prepared brussel sprouts onto the hot grill pan and let cook 8-10 minutes, moving them around occasionally, or until they reach your desired softness.

Step 4: Once they’ve reached your desired softness and are a nice golden brown color, remove them from the grill. Serve immediately with your favorite main course.

Step 5: And to amp up the flavor, feel free to top your grilled brussels sprouts with garlic, lemon zest, shredded parmesan, red pepper flakes, or balsamic vinegar.
How Long To Grill Brussel Sprouts
Cooking time depends on how large your sprouts are. Ours were on the smaller side and they cooked perfectly in 8 minutes. Larger sprouts will take a bit longer. Pour your seasoned sprouts out on your preheated grill pan and let them cook on your hot grill for 8-12 minutes, tossing occasionally.
| Size | Cook Time |
|---|---|
| Small | 8-10 min |
| Medium | 10-12 min |
| Large | 12-15 min |
Erin’s Pro Tips for the Best Grilled Brussels Sprouts

- Choose fresh Brussels sprouts: Look for firm, bright green sprouts that are similar in size for even cooking.
- Cut larger sprouts in half: This helps them cook through while creating crispy, caramelized edges.
- Grill over medium-high heat: A grill temperature of 400-450°F is ideal for tender centers and a perfectly charred exterior.
- Use a grill basket: It keeps the sprouts from falling through the grates and makes tossing them easy. No basket? A foil tray works, but the sprouts won’t be quite as crispy.
Recipe Variations
One of my favorite things about this recipe is how easy it is to customize. Try one of these simple variations the next time you fire up the grill:
- Spicy: Add crushed red pepper flakes or a pinch of cayenne to the seasoning before grilling.
- Balsamic: Drizzle the finished Brussels sprouts with balsamic glaze for a sweet and tangy finish.
- Parmesan: Toss with freshly grated Parmesan cheese while the sprouts are still hot.
- Garlic Butter: Replace the olive oil with melted garlic butter for extra richness.
- Hot Honey: Finish with a drizzle of hot honey for the perfect balance of sweet heat.
- Everything Bagel: Sprinkle with Everything Bagel seasoning just before serving for extra crunch and flavor.
- Lemon Parmesan: Add fresh lemon zest and Parmesan cheese for a bright, savory twist.
- Bacon: Toss with crispy chopped bacon and a little freshly cracked black pepper before serving.
Recipe FAQs
Yes. Use a sheet of heavy-duty foil with the edges folded up to create a simple foil tray. The sprouts won’t char quite as much, but they’ll still cook beautifully.
Not for this recipe. Cutting the sprouts in half allows them to cook through on the grill without needing to blanch them first, while still developing plenty of smoky flavor and crispy edges.
Use a grill basket or a foil tray. Both keep the sprouts contained while allowing them to cook evenly and develop a delicious char.
Store leftovers in an airtight container and store them in the refrigerator for up to 2-3 days.

Notes
- Grill Pan vs. Foil: You will definitely need to use a grill pan for the veggies – if you don’t have one use some heavy duty foil to create a homemade “basket” by folding up the sides a bit.
- Grill Time: we used smaller brussel sprouts during testing (which I prefer) and they were perfectly cooked after 8 minutes – for larger brussels sprouts it will take closer to that 10-12 minute range or longer if they are really big.
- Add-Ins: feel free to add in some garlic, lemon zest, shredded parmesan cheese or red pepper flakes!
- Serving: serve with some grilled chicken thighs, mustard mayo and some grilled sweet corn for a fun summer dinner!
