The Best Cod Tacos
There’s nothing better than a weeknight dinner that looks and tastes impressive and comes together in record time. These cod tacos check all the boxes and will have you putting them back on the menu in no time.
What You’ll Need
Baked Cod
- fresh cod fillets – We love this flaky white fish for this fish taco recipe. We always reach for wild-caught cod as we’ve found it makes the best fish tacos.
- kosher salt & ground black pepper – Just a bit to heighten flavors.
- butter – Helps to give a little extra flavor and creaminess to the cod.
- garlic – Helps to add a depth of flavor to the cod.
- cajun seasoning – You can easily switch this out with your favorite fish seasoning. The goal here is just to add a pop of flavor to help heighten the mild flavor of cod.
Light Lemon Slaw
- angel hair slaw – This is just thinly sliced raw cabbage slaw and can be found at your grocery store or feel free to cut up some of your own.
- mayo – Helps to balance out the crunchiness of the cabbage.
- lemon juice – Brightens flavors and adds just a hint of citrus.
- white wine vinegar – Adds a bit of tang and subtle sweetness.
- kosher salt – Just a touch.
Taco Toppings
- tartar sauce – or your favorite fish taco sauce will do.
- quick pickled onions – Totally worth the extra step!
- fresh dill – compliments the homemade tartar sauce if you choose to make it.
- fresh cracked pepper – Adds some warmth to each bite.
- green onion, sliced – Just a little bit of kick.
- fresh lemon wedges – Feel free to use lime wedges if this suits your pallet better.
- Tortillas – Not a topping, but an important ingredient for tacos. Flour tortillas or corn tortillas are both great options.
How To Make Cod Tacos
Start by preheating your oven to 425°F and place your white fish fillets in a baking dish of your choice. Pat dry each fillet with paper towels and season with salt and pepper. In a small bowl, combine the butter and garlic and then slather it over the tops of each fillet. Finally, season each fillet with cajun seasoning.
How To Cook Cod For Fish Tacos
Once your oven has reached temperature, place your baking dish in the middle rack and let the cod bake for 15-20 minutes or until the internal temperature reaches 140°F. Cooking time will vary depending on the thickness of your fillets. Cooking fish can be intimidating, especially if you don’t do it often. While the cod is baking, prepare the light lemon slaw by mixing the angel hair slaw, mayo, lemon juice, white wine vinegar, and salt together in medium bowl and set aside.
And if you’re making homemade tartar sauce, now is the time to mix all those ingredients together in a food processor to add to your tacos when you’re done.
Now it’s time to assemble! Let your fish cool for 2-3 minutes and then add some slaw to your favorite tortillas and the top with flaked cod, and your favorite toppings that bring so many fresh flavors. Ingredients
Baked Cod:
- 1 pound fresh cod fillets (approx. 1 inch thick)
- kosher salt and ground black pepper
- 4 tablespoons butter, room temperature
- 2 teaspoon garlic, minced
- 2–3 teaspoons cajun seasoning
Light Lemon Slaw:
- 2 cups angel hair slaw
- 2 tablespoons mayo
- 2 teaspoon lemon juice
- 1 teaspoon white wine vinegar
- pinch of kosher salt
Other Taco Ingredients + Toppings:
- tortilla of your choice
- tartar sauce
- quick pickled onions
- fresh dill
- fresh cracked pepper
- green onion, sliced
- fresh lemon wedges
Instructions
- Preheat oven to 425 degrees F.
- Prep Cod: Place cod filets in a baking dish. Pat dry with clean paper towel. Season with kosher salt and ground black pepper. In a small bowl combine butter and garlic. Take garlic butter and divide between cod filets, spreading over the top of each piece. Season cod fillets with cajun seasoning.
- Cook Cod: Place in the oven, middle rack and uncovered. Let bake approx. 15-20 minutes or until the internal temp reaches approx. 140 degrees F. (for smaller/thinner pieces this will take closer to 14-15 minutes while thicker pieces will take closer to 20-21 minutes).
- Prep Toppings: Meanwhile, prepare Light Lemon Slaw by combining ingredients in a small bowl and tossing. Taste and add any additional mayo or lemon, as desired. Prepare other taco toppings as well so they are ready to go when the cod comes out of the oven.
- Build Tacos: Once cod is finished cooking, remove from oven and let cool slightly. Flake the cod apart a bit so you have smaller, bite-sized pieces for the tacos. Take your favorite tortillas, add some lemon slaw, top with flaked cod, tartar sauce, pickled onions, fresh dill and cracked pepper.
Notes
- Cajun Seasoning: I used a store-bought cajun seasoning, but feel free to use homemade. Or, alternatively, you can use a different seasoning if you prefer. Cod is just such a mild fish I wanted a little pop of flavor here so I highly recommend.
