The Best Smashed Potatoes
These super easy smashed potatoes are perfection all on their own, but with our homemade green sauce they are out of this world! Dare I say, they might even be better than french fries. It is definitely our new favorite way to make potatoes and we love to serve them with just about anything or just snack on a few with some friends for the big game on Sunday! You will definitely be making this smashed potatoes recipe again and again!
What You Will Need
- small potatoes – highly recommend picking up those classic yellow potatoes at your local grocery store, but red potatoes would work too!
- olive oil – drizzle some on the smashed potatoes to get them a nice golden brown, plus add a little to the sauce recipe.
- salt and pepper – simple seasonings that are always a must!
- parmesan cheese – absolutely love some fresh grated parmesan cheese, but you can omit if it isn’t your thing.
- mayo & sour cream – perfect combination for the creamy base of the herby green sauce.
- fresh parsley, chives, & tarragon – these fresh herbs bring all the best flavor!
- lemon juice – just a little bit for that touch of acidity to amplify all the flavors going on.
- rice vinegar – a splash to help the depth of flavor in the creamy sauce.
- fresh garlic – everything is always better with some garlic in the mix.
How To Make Smashed Potatoes
The first steps to making this easy recipe are to gather all of the simple everyday ingredients for the sauce. Put them all in a small food processor or blender and blend until smooth. Set aside.

Now bring a large dutch oven of water to a boil. Carefully add the small, whole potatoes to the boiling water and let them cook for about 15-20 minutes or until very fork tender. Drain and rinse under cold water to help them cool quicker.

Cover the bottom of a rimmed baking sheet with parchment paper. Place potatoes on the paper in a single layer and use a flat glass or measuring cup to smash each potato to be about 1/4-1/2 inch thick.

Drizzle the smashed potatoes with olive oil and then sprinkle with salt and pepper. Next, add some parmesan cheese to each one. Move the entire pan to the oven to bake at a high heat of 425 degrees F for 20-22 minutes of cooking time (it will vary depending on the size of your potatoes).

Serve roasted potatoes with some of the green sauce on top or on the side for dunking.

Best Way To Serve Smashed Potatoes
These crispy smashed potatoes are perfection with some of that fresh and cool herby green sauce! They could also be enjoyed with some seasoned sour cream or ketchup. Enjoy this favorite side dish with some Smoked Chicken Quarters, Cast Iron Pork Chops, or dress them up with a Grilled Beef Tenderloin!

Storage
Any leftover potatoes can be kept in an airtight container in the fridge for 3-4 days. The herby green sauce can also be kept in the fridge for up to 1 week.

Ingredients
Smashed Potatoes:
- 8–10 baby Yukon gold potatoes
- extra virgin olive oil
- kosher salt
- ground black pepper
- 1/4 cup parmesan cheese, freshly grated
Herby Green Sauce:
- 1/4 cup mayonnaise
- 1/4 cup sour cream (sub dairy-free sour cream)
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh chives, chopped
- 2 tablespoons fresh tarragon, chopped
- 1/2 tablespoon lemon juice
- 1/2 tablespoon olive oil
- 1/2 tablespoon rice vinegar
- 1/2 teaspoon garlic, minced
- 1/4 teaspoon kosher salt
- ground black pepper, to taste
Instructions
- Prep: Preheat oven to 425 degrees F. Cover the bottom of a large baking sheet with parchment paper.
- Boil Potatoes: Bring a large pot of water to a boil over medium-high heat. Add whole potatoes to the pot and boil for 15-20 minutes or until fork tender. Drain potatoes.
- Make Sauce: While the potatoes are boiling, put the Herby Green Sauce ingredients in a small food processor and blend until smooth. Set aside.
- Smash Potatoes: Place the boiled potatoes on a parchment-lined baking sheet and use the flat bottom of a glass to smash each one. Drizzle the smashed potatoes with olive oil, sprinkle with salt, pepper, and grated parmesan cheese.
- Bake: Move the baking sheet to the preheated oven to bake for 20-22 minutes.
- Serve: Enjoy the smashed potatoes with a drizzle of Herby Green Sauce on top!
Notes
- Dairy-Free: simply use a dairy-free sour cream and omit the parmesan cheese or use a dairy-free alternative.
- Potatoes: highly recommend baby Yukon gold potatoes but feel free to swap out for another type of potato, just make sure they are small in size.
