Easy Quinoa Greek Salad
If you’ve been around for a while, you know that Greek flavors are my absolute favorite. They’re bold and tangy and easily blend with fluffy quinoa and hearty kale. Not only is this recipe healthy, but it’s quick! You just need around 20 minutes to prep, assemble, and serve. Make a big batch and enjoy it throughout the week!

What You Will Need
- quinoa – a naturally gluten-free seed that’s treated like a grain. We love it for it’s fluffy texture and mild flavor.
- feta cheese – a rich and tangy cheese.
- kalamata olives, English cucumber, cherry tomatoes, red onion – Veggies that are often on a traditional greek salad.
- kale – One of our favorite hearty greens that adds color and nutrition.
- canned artichokes – This meaty veggie adds savory depth and a slightly fibrous texture.
- Greek vinaigrette – Grab some from your local grocery store or make up our homemade Greek vinaigrette.
- lemon zest – Just a bit to add some acidity and extra flavor.
- kosher salt & ground black pepper – To help heighten all of the other natural flavors.
What Is Quinoa?
Quinoa is pseudocereal, which means that it’s a seed that is used like a grain. We love using it when we want to bulk up a salad with extra protein, as it is high in protein and has all 9 essential amino acids, which is rare for a plant based ingredient. Once cooked, it’s light and fluffy in texture and quite mild in taste, making it perfect to pair with salty feta cheese, juicy tomatoes, and the other bold flavors in this recipe. It can usually be found near the rice and grains at your local grocery store.

Perfect for Meal Prep
This is an excellent recipe to meal prep earlier in the week. Simply chop your veggies, cook the quinoa, and mixup the dressing. Then store everything in separate containers until you’re ready to assemble and enjoy! Or assemble the whole salad at the beginning of the week and keep some extra dressing on hand as the dressing will soak into the quinoa while it sits in the fridge.
Put the quinoa, feta cheese, kalamata olives, kale, artichokes, lemon zest, salt, and pepper in a large serving bowl and mix everything together. Then add about a quarter cup of the dressing, taste, and add more to your liking.

Our simple Greek Quinoa Salad recipe is full of the best flavors and perfect for a meatless dinner or meal prep for lunch all week!
Ingredients
- 2 cups quinoa, cooked
- 1.5 cups (6.25oz jar) kalamata olives, drained
- 4oz feta cheese, block & cut into squares or crumbled
- 1.5 cups english cucumber, quartered
- 1 cup cherry tomatoes, halved
- 1 cup fresh kale, chopped
- 1/3 cup red onion, diced
- 1/4 cup canned artichokes, quartered
- 1/4 – 1/2 cup Greek vinaigrette, more if desired
- 1 teaspoon lemon zest
- 1 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
Instructions
- Combine: Put all of the ingredients in a large bowl and mix to combine. Start with 1/4 cup of the Greek vinaigrette and add more, if desired.
- Taste & Serve: Taste the fully mixed salad and adjust any ingredients to your personal preferences. Enjoy!
Notes
- Vinaigrette: highly recommend making our homemade Greek vinaigrette, but you can also keep it easy and use a store-bought option (we love Primal Kitchen’s Greek Vinaigrette)!
- Dairy Free: simply omit the feta cheese or use a dairy-free alternative.
- Meal Prep: this is a great recipe to meal prep for the week! Be sure to keep some vinaigrette on hand to add a splash before serving because some will get soaked up while it chills in the fridge.
