- Baby Yukon Gold Potatoes – any variety of potato will work here, they will just have different cook times.
- Avocado Oil – option to sub with olive oil to help achieve that golden brown roast on the outside of the potatoes.
- Spices – a combination of salt, pepper, and classic spices for maximum flavor!
How To Smoke Potatoes

Step 1 – Cut potatoes into 1-inch cubes.

Step 2 – Toss in oil.

Step 3 – Toss in seasonings and place on an aluminum foil boat.

Step 4 – Add the butter on top.

Step 5 – Smoke for about 2 hours and turn up the heat for the last 20-30 minutes; until soft.

Step 6 – Remove and serve!
What To Serve With Smoked Potatoes
Small smoked potatoes are the perfect side dish to just about anything:
- Main Courses: smoked baby back ribs, smoked pork tenderloin, smoked pork shoulder, or easy smoked chicken breasts.
- Breakfast: love enjoying some leftovers with over easy eggs and bacon in the morning!

Smoked Potatoes FAQs
Typically a mild fruit wood, like cherry or apple work well for potatoes.
Some diced onions and/or minced garlic would be delicious!
This will vary because there are so many variables at play which can impact time: humidity, temperature, hot spots on the grill, wind, etc. During testing on a Traeger Smoker, we found that after 3+ hours at 225 degrees F the potatoes were smokey, but not soft, so we finished cooking them at a higher temp. This resulted in a smokey, soft potato – feel free to cook longer or less depending upon your smoker and your desired softness.
Turn up the heat! After testing, it was determined that the heat needs to be turned up to finish cooking the potatoes and fully soften them.
Leftover smoked potatoes can be kept in an airtight container in the fridge for up to 4 days or in a freezer-safe container for up to 1 year.

Ingredients
- 1 ½ pounds baby Yukon gold potatoes, 1-inch chunks (or baby red potatoes)
- 1 tablespoon avocado oil, sub extra virgin olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon dried oregano leaves
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon dried marjoram
- 1 tablespoon butter, regular or plant-based
Instructions
- Prep: Preheat the smoker to 225℉.
- Season Potatoes: Place potatoes in a medium mixing bowl. Add 1 tablespoon avocado oil, ½ teaspoon kosher salt, ¼ teaspoon ground black pepper, ¼ teaspoon dried oregano leaves, ¼ teaspoon garlic powder, ¼ teaspoon onion powder and ¼ teaspoon dried marjoram. Stir to coat the potatoes.
- Foil Boat: Create an aluminum foil boat and spray the bottom with non-stick cooking spray or olive oil. Put the potatoes inside. Place 1 tablespoon butter on top.
- Smoke: Place potatoes on the smoker and close the lid. Let smoke for 1 ½ – 2 hours. Increase the smoker temperature to 350℉ and let potatoes continue to cook for 20-30 minutes – or until they have reached your desired softness.
- Serve: Remove from smoker and serve immediately.
Notes

- Russet Potatoes: can be used, but they may cook a little faster, so just test the potatoes often for doneness!

These turned out perfectly! Used olive oil, spices as listed, mixed in some bacon grease in a foil pan. Smoked for at least an hour, with super smoke on my Traeger. Weren’t quite done so covered in the oven at 350 for maybe another hour? They were soft and buttery, with some browned bits. Couldn’t stop nibbling! Made enough for side dish as well as for a breakfast casserole I’ll be doing in the foil pan for a new mom.
