Blackberry Cucumber Gin and Tonic- a sweet and crisp version of the classic cocktail.
As much as I don’t want to admit it, summer is slowly coming to a close. But we still have time for at least one more (okay maybe more) bright, fresh and summer drink! And this Blackberry Cucumber Gin and Tonic is the perfect end-of-summer cocktail!
I am so not ready to get back into the school year routine. I am savoring every late weeknight with the girls playing outside until all hours with the neighborhood kids; running around barefooted and just loving up those warm summer nights. I love living in Minnesota, but when it gets dark at 5:00 (okay…4:30) it is more than a little depressing.
Soooo….. for now we won’t think about that ? Instead, we will focus on the fact that it is mid-August and the summer nights are still with us. And we will enjoy it to the fullest. Staying up late, eating s’more’s and running around outside getting dirty. All the while I will be sipping on one of these guys…. of course.
Those sweet blackberries, you guys! I know some people are adverse to the taste of gin, but mixed with blackberries and cucumbers – man it is good! Alright you guys – it is Saturday morning and we are currently watching the first Harry Potter movie all snuggled up on the couch ? It is foggy out and kind of dark and absolutely perfect for a snuggling-movie-marathon if you know what I mean. But, later today I will be sipping on one of these on the deck, enjoying the beauty that is a Minnesota summer ☀️ I hope you guys have a wonderful weekend!!
A sweet and crisp version of the classic cocktail!
- 8 fresh blackberries
- 3–4 slices cucumber
- 1–1.5 ounces of the gin of your choice
- 1 cup tonic
- Place 5 blackberries in the bottom of your cup and smash with a fork.
- Add as much ice as you would like.
- Pour gin in and swirl around with the blackberries.
- Add tonic.
- Garnish with the rest of the blackberries and cucumber slices.
