What are Overnight Oats
Overnight oats are simply an easy way (no cooking involved) to cook oats. The oats are cooked by sitting in a little liquid (here we are using banana, almond milk and maple syrup) and soaking it up. As a result, the oats get softer. The longer they sit the softer they get so you kind of need to figure out where your personal preference is as far as texture goes. If you do let them sit overnight the texture resembles almost a pudding that you can eat hot or cold.
Why are overnight oats a good breakfast option
- Filling: Oats are filing and you can make the even more filling by adding in some protein powder or collagen!
- Customizable: Not only can you control the toppings you put on your overnight oats, but you can easily make them gluten-free, plant-based and dairy-free!

Description
Blueberry Overnight Oats – such a great way to start the day!
Ingredients
- 1 small banana
- 1/2 cup unsweetened almond milk
- 1 tablespoon real maple syrup
- 3/4 cup rolled oats
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- Fresh Blueberries (use as much or as little as you like – I recommend 1/2-1 cup)
- (optional) 1 teaspoon fresh lemon zest
Instructions
- Place banana in small bowl and mash with a fork until smooth.
- Add vanilla extract, almond milk and maple syrup; stir until smooth.
- Add oats, chia seeds and lemon zest (if using); stir to combine.
- Pour into airtight container and let sit anywhere from 30 minutes to overnight.
- Add blueberries when serving OR add the night before – as long as they are firm blueberries they will be fine.
- Feel free to drizzle with a little honey if you want before serving!
Notes
- Blueberries: if you are prepping the for breakfast I would suggest placing overnight oats in a mason jar and adding blueberries on top. You can mix them in and they will be fine overnight if they are nice and firm. You can also just add in fresh blueberries upon serving.
- How long to let sit: The oats will be ready to eat anywhere between 30 minutes or overnight and will be good up to 5 days. Figure out what you prefer as far as how long you want them to sit before eating!
