There is simply nothing better than a classic grilled burger in those hot, summer months! We love to bring our cooking outside, fire up the Blackstone griddle, and grill the viral flying dutchman burger for all of our family and friends. It is fairly messy to eat, but the flavors are out of this world. Whether you make it a single burger or a double, it is an epic new burger recipe that we can’t wait for you to try at your next cookout!

What You Will Need
- burger sauce – option to keep it simple with some ketchup and yellow mustard but this easy burger sauce can be whipped up in just a few minutes and is so good!
- yellow onion – simply cut these mild onions into large slices and sear to golden brown. Option to sub with white onions, if you want.
- ground beef – just pick up a pound of beef at your local grocery store.
- salt and pepper – simple seasonings that are always a must when cooking any type of meat.
- butter
- cheese slices – we used a slice of American cheese but any variety of slices of cheese would be a great addition.
- burger pickles – one of our all-time favorite burger toppings.
How To Make A Flying Dutchman Burger
The easy steps to making this delicious burger are to gather all of the basic ingredients and mix up the burger sauce.
Now, use a large sharp knife to cut the onions into very thick slices. Try to keep some of the root intact at the end to help hold the circles together. Bring the flat top griddle to a medium heat, spread butter to melt, and sear both sides. This will create slightly caramelized onions.
Set the onion slices aside and add the beef balls to the hot grill. Use a burger press to smash each burger to be about 1/4 inch thick. Sear burger patties for 40 seconds, use a large spatula to flip the beef patties, add cheese, close the lid, and let them finish cooking for 2 minutes over a medium high heat.
Then it is time to build your simple burger. On one group of grilled onion, add a burger patty, some burger sauce, pickle chips, and another section of onion rounds on top.

Ingredients
Burger Sauce:
- 1/2 cup mayo
- 1/4 cup ketchup
- 1 tablespoon dill pickles, finely chopped
- 1/2 teaspoon pickle juice
- 1/4 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 1/2 teaspoon soy sauce (sub coconut aminos)
- 1/2 teaspoon rice vinegar
Flying Dutchmen Burgers + Toppings:
- 2 large sweet yellow onions
- 1 pound ground beef, 80/20
- 3/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1–2 tablespoons butter
- 4 slices American cheese
- 2–3 burger pickles

Instructions
- Make Burger Sauce: Add the classic Burger Sauce ingredients to a small bowl, stir to combine. Set aside.
- Prep Onions: Cut off ends of onions and remove outer skin. Cut into thick slices, approx. 3/4-1 inch thick. Set aside.
- Prep Burger Balls: Add ground beef, salt, and pepper to bowl. Mix to combine. Use a scale to create 1/4 pound balls with your hands and set aside.
- Prep Other Ingredients: Have cheese ready to go, some salt + pepper for seasoning, as well as an extra plate to put your cooked burgers on. Having everything prepped and ready to go is essential, because the cook time goes real quick.
- Sear Onion: Ensure Blackstone is clean, oiled and ready to go. Bring to medium-high heat and add butter to melt. Add onions and sear approx. 1-2 minutes per side. You want a nice sear, but you don’t want to actually cook them too much. Remove and set aside.
- Cook Burgers: Place burger balls on flat top. Slowly press down on each ball to flatten until the patties are approx. 1/4 inch thick. This will take 15-20 seconds per burger. Let sit and cook for 40 seconds (feel free to season patties at this point if you want). Flip and immediately add a slice of cheese to each. Close lid and let burgers cook approx. 2 minutes. Open lid and move burgers to clean plate.
- Build + Serve Burger: Take a seared onion slice and place the cooked burger on top (or stack two burgers). Top with burger pickles, burger sauce and top with the other cooked onion slice. These are messy, but oh so delicious!!
Notes
- Double vs. Single: totally up to you if you want to stack for a double burger or keep it at a single – personal preference!
- Cast Iron Skillet: you can definitely make these in a large skillet, but it might work best if you use two skillets, one for the burger and one for the onions so they can be done at the same time.
- Cook Time: we did the dirty work here and tested all the different time frames – the 3 minutes total time had the most consistent results for a not undercooked, not overcooked burger. If you are concerned, you can shoot for closer to 2 minutes 50 seconds, if you want!
- Burger Press + Paper Squares: you can definitely get away with using a sturdy metal spatula and pressing down on it with a full can of beer or something, but the burger press really is nice here! You can also place a paper square between the ball of ground beef and burger press when you press it down, to keep it from sticking. We didn’t and obviously it worked just fine, but feel free to use these if you want.
