So, we decided to use our tutorial on how to butterfly chicken breasts and cut down that cook time on the grill. And, let’s just say… wow! We still get a perfectly juicy piece of chicken in a fraction of the time. Amazing and a great option for adding to so many different dinner recipes!

- chicken breasts – sometimes they are a little thick, so we have cut them in half, lengthwise, for a more even cook that results in tender chicken every time!
- soy sauce – a super basic chicken marinade, but feel free to use your favorite or sub with coconut aminos to make it gluten-free.

Grilling Tips
To ensure that you are successful when cooking on the grill, keep these things in mind:
- Make sure the grill is hot! Just turn it on when the chicken goes into the marinade to preheat before starting to cook anything.
- Clean + Greased grates! You always want to make sure the grill grates are clean and greased before placing the meat on them.
- Use a Meat Thermometer! When cooking meat, always make sure you have a meat thermometer handy to keep track of that internal temperature.

- How long do you grill chicken cutlets? This will depend on the size of the chicken, but our chicken cutlets typically take around 4-5 minutes on each side. Be sure to use a meat thermometer and cook until their internal temperature reaches 162 degrees F. Then let them rest for 5-10 minutes and the temp will reach 165 degrees F.
- Should I marinate chicken cutlets? Using a marinade is a great idea for keeping chicken juicy and tender. We kept it simple by using soy sauce as the marinade, but our chicken marinade or other store-bought options would also work!
- What seasoning is good for chicken cutlets? If marinades aren’t your thing or you just really want to amp up the flavor by using both, try sprinkling a chicken seasoning on both sides of the cutlets before grilling!

Description
These Grilled Chicken Cutlets are the perfect way to have juicy, tender chicken on the grill in a fraction of the time!
Ingredients
- 2 boneless, skinless chicken breasts
- 1/3 cup soy sauce (sub coconut aminos or tamari)
- kosher salt and ground black pepper
Instructions
- Cut Chicken: Lay chicken breasts flat on a cutting board. Use a sharp knife to cut each chicken breast in half, lengthwise. This will result in 4 chicken cutlets that are half as thick.
- Marinate Chicken: Put the chicken cutlets in a bowl or large storage bag with the soy sauce to marinate for 15-30 minutes.
- Prep: Preheat the outdoor grill to a medium-high heat and ensure the grill grates are clean.
- Grill Chicken: Remove the chicken from the marinade, allowing any excess liquid to drip off. Season chicken with a sprinkling of salt and pepper on both sides. Place the cutlets directly on the grill grates to sear for about 3-4 minutes on each side. Drop the heat of the grill a little bit while the chicken finish cooking. Let them cook until their internal temperature at the thickest part of the meat reaches 165 degrees F (use a meat thermometer).
- Rest: Let the meat rest for about 5-10 minutes on a cutting board.
- Serve: Enjoy the chicken by itself or use in your favorite recipe – we love them on our Grilled Protein Chicken Salad + Seedy Granola Crunch!
Notes
- Marinade: we kept it simple for these cutlets and just used soy sauce but, if you have the time, we also highly recommend our Chicken Marinade!
- Storage: this is a great way to prep some cooked chicken to use later in the week. After cooking, store in an airtight container in the fridge for 4-5 days.
