This is a simple marinade that is made with real ingredients that you probably already have in your kitchen and the flavor really is amazing! What You Will Need
- olive oil – a necessity in any homemade marinade for lots of moisture.
- soy sauce – if you want it to be Paleo/Whole30/Gluten-Free you can sub this with coconut aminos.
- lemon juice – just a bit of acidity really brings out all the great flavors.
- white onion – we grated an onion for this one because it really gives off a lot of great flavor that goes will with the pork roast.
- garlic – because everything is better with garlic!
- dijon mustard – this mustard really compliments the pork nicely!
How Long Should You Marinate
We recommend that you marinate it for at least 30 minutes but if you are planning ahead you could marinate it for as long as 3-4 days in the fridge.

First, you will gather your ingredients in a bowl.
Next, whisk them together.
Then you can pour it over your pork roast in a shallow dish and let it sit for at least 30 minutes.

- Should You Pierce Meat Before Marinating: This is up to you! You can marinate it either way, but piercing the meat before pouring the marinade on top does allow the marinade to go as deep into the meat as possible. If you do choose to pierce the pork roast you can simply use a fork to do this.

Ingredients
- 1/3 cup extra light olive oil
- 1/4 cup soy sauce*
- 1 teaspoon lemon juice
- 1/4 cup grated white onion
- 1 teaspoon garlic, minced
- 1 teaspoon dijon mustard
Instructions
- Add: Add ingredients to a small/medium mixing bowl.
- Combine: Whisk until olive oil starts to emulsify a bit and mixture becomes fully combined.
- Marinate: Pour over pork roast (love seasoning it first with this pork roast seasoning) and marinate for at least 30 minutes before making your favorite pork roast recipe (we recommend this one).

Can you cook the pork roast in the marinade or remove it first. This marinade tastes great but want to check.

Hi Pat – generally with marinades you discard any remaining marinade and cook your protein with some marinade still on – I haven’t tried just cooking the pork in the entire marinade before, if that’s what you are asking!

I am trying this today but unfortunately, I paid attention only to the name of the recipe and not the details. I appears to be a sauce, not a marinade which is what I wanted. Might want to rename it. Right now my pork is marinading in the sauce. I am hoping that it has enough punch to tenderize the meat.
