We are big fans of salmon recipes over here at The Wooden Skillet and when you combine crispy salmon bites in a rice bowl with avocado, cilantro, lime, and cotija cheese… oh my! This is the bowl of our dreams! Rice bowl recipes are always our go-to easy dinner option because our whole family can build their bowl anyway they want. Get creative with your rice bowl toppings and just make sure you reserve some of that cilantro lime sauce for drizzling on the finished bowl!

What You Will Need
- olive oil – the base for any homemade marinade recipe.
- lime zest & lime juice – this little bit of acidity helps to amplify all the flavors of the marinade and the cilantro lime slaw.
- chili powder, cumin, & kosher salt – simple seasonings that bring a wonderfully warm heat to the cooked salmon.
- soy sauce – added to the salmon marinade for the flavor and saltiness.
- fresh cilantro – a light and refreshing topping that always hits the spot!
- salmon fillet – we prefer fresh salmon, but frozen salmon will work too! Just pick-up a high-quality salmon option at your local grocery store and make sure it is thawed before cooking.
- sour cream & mayo – the creamy base of the cool and crisp slaw that really make this bowl!
- garlic – everything is always better with a little garlic in the mix.
- green cabbage – you will want it cut really thin. Do this yourself or most stores sell a bag of angel hair green cabbage in a bag.
- cooked rice – any type of rice will work here, white rice, brown rice, or even cauliflower rice!
- avocado – one of our all-time favorite foods that can go on just about anything.
- cotija cheese – love adding a sprinkling of this cheese on top.
- lime wedges – a great option to add a fresh squeeze of lime juice to the bowl.
- quick pickled red onions – you can easily make these homemade pickled onions in minutes!
How To Make Salmon Taco Bowls
The first steps to making this easy recipe are to use a sharp knife and cutting board to cut the fresh salmon fillet into bite-sized pieces.
Whisk together the chile lime marinade in a small bowl and pour over the salmon chunks. Carefully toss to coat the salmon and place in the fridge for 10-15 minutes.
In a separate bowl, mix together the creamy cilantro lime slaw ingredients.
After the salmon has marinated for a little bit, place the salmon pieces in a single layer on a large baking sheet with parchment paper. Bake at 450 degrees F for 10-15 minutes. They will get crisp on the outside with a nice, golden brown color.
Now it is time to assemble the bowl over a bed of rice.
Best Ways To Serve A Salmon Taco Bowl
We chose to top our salmon rice bowl with fresh avocado slices, cotija cheese, slices of quick pickled red onions, cilantro, and a lime wedge for that fresh lime juice! Feel free to top your salmon bowl any way you want. Other options that might be good are cucumbers, carrots, edamame, corn kernels, or jalapeño slices for a little kick of heat!

Ingredients
Chili Lime Salmon Bites:
- 2 tablespoons extra virgin olive oil
- zest of 1 lime
- 2–3 teaspoons lime juice
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1 tablespoon garlic, minced
- 1 tablespoon soy sauce
- 1/4 teaspoon kosher salt
- 1–2 tablespoons fresh cilantro, minced
- approx. 1 lb fresh salmon, cubed
Creamy Cilantro Lime Slaw:
- 1/4 cup sour cream
- 1/4 cup mayo
- 2 teaspoons lime juice
- zest of 1 lime
- 1 tablespoon fresh cilantro, chopped
- 1 teaspoon garlic, minced
- pinch of kosher salt and ground black pepper
- 1 cup angel hair green cabbage
Other Rice Bowl Ingredients:
- 4 cups rice of your choosing, cooked
- 1 avocado, sliced
- 1/2 cup cotija cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- 4 lime wedges
- quick pickled onions
Instructions
- Marinate Salmon: In a medium bowl whisk together olive oil, lime zest, lime juice, chili powder, cumin, garlic, soy sauce, salt, and cilantro. Add salmon cubes, toss to coat. Place in refrigerator and let marinate 10-15 minutes.
- Cilantro Lime Slaw: Meanwhile, combine sour cream, mayo, lime juice, lime zest, cilantro, garlic, salt, and pepper in a small bowl – this is your cilantro lime sauce. In another small bowl, add angel hair cabbage. Add a little less than half of the sour cream mixture on top of the cabbage; toss to coat and set aside – this is your cilantro lime slaw. Reserve the remaining cilantro lime sauce for later.
- Cook Salmon: Preheat oven to 450 degrees F. Remove salmon from refrigerator and transfer to a parchment-lined baking sheet; try to ensure the salmon pieces aren’t touching each other. Place in oven, middle rack, and let cook 10-15 minutes or until salmon is fully cooked. Remove and let cool slightly.
- Assemble Bowl: Divide the rice, salmon, cilantro lime slaw, avocado, cotija cheese, and cilantro between 4 bowls. Garnish with a fresh lime wedge, quick pickled onions, and drizzle salmon with remaining cilantro lime sauce, as desired.
Notes
- Dairy-Free: use a dairy-free sour cream and omit the cotija cheese.
