The Best Blackstone Breakfast Burrito
Here in Minnesota we only have a few months of summer each year, which means that we try to be outside as much as possible! And, trust us, when we say that there is nothing better than making a delicious breakfast outside before the day begins to heat up. After a little prep, this breakfast burrito recipe cooks up so quickly. Love the flavor combination that we created in the recipe card below, but you can easily switch up the filling ingredients to whatever you have on hand or prefer. Plus, it is easy to meal prep a big batch and enjoy as a quick breakfast all week long!

What You Will Need
- olive oil – a generous drizzle on the cooktop to cook the hashbrowns.
- hash browns – we used frozen hash browns, but feel free to use your favorite type of hashbrown.
- ground sausage – option to pick-up a store-bought version at your local grocery store or simply make your own homemade breakfast sausage.
- red onion – a mild onion that is always great for adding the best flavor!
- poblano pepper – this very mild pepper is a great addition, but any type of pepper would work – green bell pepper, red bell pepper, etc.
- whole eggs – we always use high-quality eggs for our favorite breakfast recipes.
- salt and pepper – simple seasonings that are always a must!
- tortillas – we used burrito-sized tortillas, but feel free to use smaller tortillas and make breakfast tacos instead.
- shredded cheese – any variety of cheese works here, we like cheddar jack cheese but cheddar cheese or pepper jack cheese would be great too!
- avocado – one of our all-time favorite ingredients that is so good.
- fresh cilantro – a fresh herb that lightens and brightens all the flavors going on in this burrito.
- butter – just a little bit on the hot cooktop to crisp up the outside of each wrapped burrito.
How To Make Blackstone Breakfast Burritos
The first steps to making this easy recipe is to gather and prep all of the simple ingredients.
Now bring the flat top griddle to a medium high heat, add oil, and cook the hash browns until they are crisp and golden brown.
On the other side of the Blackstone griddle, add the sausage, red onion, and poblano pepper. Toss with a large spatula and move around until fully cooked.
Once they are fully cooked, carefully remove the sausage mixture and hash browns. Keep the flat top hot and add the whisked eggs. Move around until they are fully cooked with some salt and pepper.
Now it is time to build the breakfast burritos. Down the middle of a large tortilla, add some hash browns, meat mixture, eggs, cheese, avocado, and cilantro. Fold in the sides and tightly roll the burrito away from you. Continue this process until all of the burritos are wrapped.
These wrapped burritos can be eaten as-is or you can take them to the next level and return them to the hot cooktop (with a little butter) to toast the outside. Highly recommend doing this very simple step! So worth it!
Best Way To Serve Blackstone Breakfast Burritos
This delicious handheld breakfast burrito is so good on its own, but feel free to add some regular sour cream (dairy free sour cream), salsa, a drizzle of sriracha or any other favorite burrito toppings. And if you are looking to round-out a complete breakfast, you can enjoy with a mango smoothie or some iced coffee!

Description
The BEST Breakfast Burritos! Packed with all the things like hashbrowns, sausage, eggs and topped with hot sauce and sour cream. So good!
Ingredients
- 3 tablespoons extra virgin olive oil
- 4 cups frozen, shredded hashbrowns
- 1 pound breakfast sausage
- 1/4 cup red onion, diced
- 1 poblano pepper, diced
- 8 large eggs, whisked
- kosher salt
- ground black pepper
- 6 large flour burrito tortillas
- 1 cup cheddar jack cheese, shredded, more if desired
- 1 avocado, sliced
- 1/4 fresh cilantro, chopped
- 1/2 tablespoon butter
- topping: Sriracha, sour cream, salsa
Instructions
- Cook Hashbrowns: Bring flat top grill to medium-high heat. Add oil to one-half of the cooking surface and move around to coat. Add the hashbrowns and flatten; season with salt and pepper. Let sit and cook 4-10 minutes (or until they turn golden brown), flipping halfway. Transfer to a plate and set aside.
- Cook Sausage: Meanwhile, add the breakfast sausage, onion and poblano pepper to the other side of the cook top. Move around until the sausage is cooked through. Transfer to a plate and set aside.
- Cook Eggs: Give the cooktop a little wipe down with some paper towel (to avoid having your eggs turn a little black) and then pour eggs into the center of the cook top. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper and move around constantly until the eggs are cooked through. Transfer to a plate.
- Build Burritos: Place a large burrito-sized tortilla on a flat surface. Place some hash browns in the center, top with cooked sausage, cooked eggs, shredded cheese, 2 slices of avocado and some fresh cilantro. Wrap up tightly into a burrito.
- Brown: Add a little butter to the flat top griddle and move around to coat the middle of the cooking surface. Place rolled burritos folded-side down and let sit 1-3 minutes or until they start to brown. Gently flip and repeat on other side.
- Serve: Cut in half and serve with sour cream, salsa, hot sauce and some green onions.
Notes
- Makes 6 burritos
- Breakfast Sausage: we used a seasoned breakfast sausage – if you are using an unseasoned sausage, season it accordingly.
- Cheese: feel free to use any type of cheese you prefer.
- Dairy-Free: to make this dairy-free use a dairy-free shredded cheese and dairy-free sour cream.
- Gluten-Free: to make this gluten-free try using a Siete Burrito Tortilla.
