We have been making the most flavorful chicken fajita recipes for years, whether they are the best chicken fajitas on the stove top, grilled chicken fajitas, or slow cooker chicken fajitas – we love them all! An easy chicken fajita recipe always hits the spot and is quick and simple for a family weeknight dinner. Plus, you can simply swap out the protein and/or fresh veggies to make this blackstone fajita recipe is so many different ways. We will definitely be making some steak fajitas or shrimp fajitas next time on our outdoor griddle!

What You Will Need
- chili powder, onion powder, garlic powder, paprika, cayenne pepper, dried oregano, cumin, salt and pepper – simple ingredients that bring all the flavor!
- lime juice & lime zest – both add some light and refreshing flavor to the chicken and the homemade sauce on top.
- extra virgin olive oil – the base of the chicken fajita marinade.
- boneless skinless chicken thighs – highly recommend using this cut of meat, but you can use boneless skinless chicken breast too.
- sliced onion – feel free to use our suggested onion combination in the recipe card below but you can also stick with just yellow onion or red onion, if you want.
- bell peppers – traditional ingredient when cooking any type of fajitas!
- fresh garlic – everything is always better with a little garlic in the mix.
- fajita seasoning – absolutely love our easy chicken fajita seasoning, but you can also pick-up a store bought version from your local grocery store.
- plain yogurt & mayo – these combine to create the base of the best creamy sauce that goes on top of each chicken fajita.
- fresh cilantro – perfect to lighten and brighten just about any recipe.
- tortillas – any variety of tortillas work here – flour tortillas, corn tortillas, gluten free tortillas, etc.
- lime wedges – serve with your dinner for that fresh squeeze of lime juice.
How To Make Blackstone Chicken Fajitas
The first, simple steps to making this easy recipe are to mix the chicken fajita seasonings in a small bowl with the lime juice and olive oil. Pour over the chicken thighs in a large bowl or plastic bag to marinate while you prep everything else.
Now get busy cutting up the strips of bell peppers and place them in a large bowl with the onions, garlic and fajita seasoning. Toss to coat.
Next, place the cilantro lime sauce in a small food processor or blender. Blend on high to fully combine.
When you are ready to start the cooking process, bring your flat top grill to a medium-high heat, drizzle with some olive oil and cook the seasoned chicken for about 3-4 minutes per side. Continue cooking until they reach an internal temperature of 162 degrees F (use a meat thermometer). Carefully remove chicken and let meat rest on a cutting board.
Now it’s time to cook those fajita veggies! Just add a thin layer of oil, add the veggies, and keep tossing them with a large spatula for a few minutes on medium heat or until they reach your desired softness.
Carefully remove the fajita mix veggies, cut the chicken into thin strips, and serve these delicious fajitas any way you want!
Best Way To Serve Blackstone Chicken Fajitas
These delicious chicken fajitas can be served in a few different ways. Highly recommend serving the chicken and vegetables on warm tortillas with all of your favorite toppings! A few of our favorites are guacamole, fresh cilantro, sour cream, pico de gallo, shredded cheese, in addition to that cilantro lime sauce, of course! Another great way to serve this simple recipe is to make a chicken fajita bowl and serve on some cooked rice. So good!
Storage
Leftover fajitas can be stored in an airtight container in the fridge for up to 5 days! So meal prep a big batch, enjoy some for dinner, and store some for lunches later in the week.
Recipe FAQs
- Do you cut chicken fajita meat before cooking? This is totally up to you! We used chicken thighs and cooked them whole. Cutting the chicken into smaller pieces before cooking, just means a shorter cook time. If you decide to use chicken breasts then we definitely recommend cutting them into strips before cooking to prevent them from drying out.
- How do you keep chicken from sticking to Blackstone? Simply drizzle on that olive oil and spread it across the cooking surface with a large spatula. Then make sure you let the chicken cook for a couple minutes before moving, if you try to move it too soon it is more likely to stick.

Ingredients
Fajita Chicken:
- 3 teaspoons chili powder
- 1 1/2 teaspoons kosher salt
- 1 teaspoon paprika (smoked paprika, if you can find it)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder (smoked garlic powder, if you can find it)
- 1/8 teaspoon ground cayenne pepper
- 3 teaspoons ground cumin
- 1 teaspoon dried oregano leaves
- 1/4 teaspoon ground black pepper
- 2 tablespoons lime juice
- 1/4 cup + 1 tablespoons extra virgin olive oil, divided
- 6–8 boneless, skinless chicken thighs
Fajita Veggies:
- 1/2 red onion, sliced
- 1/2 yellow onion, sliced
- 3 bell peppers (red, green, orange), sliced
- 1 tablespoon garlic, minced
- 2 tablespoons fajita seasoning
- additional kosher salt and ground black pepper, to taste
Cilantro Lime Sauce:
- 3/4 cup plain Greek Yogurt
- 1/4 cup mayo
- 1 tablespoon light olive oil
- 2–4 tablespoons lime juice
- zest of 1 lime
- 1/4 cup fresh cilantro, chopped
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
Other Ingredients:
- tortillas of your choice, warmed
- lime wedges
- fresh cilantro leaves
- sour cream (optional)
- guacamole (optional)
Instructions
- Prep Fajita Chicken: In a small bowl combine chili powder, kosher salt, paprika, onion powder, garlic powder, cayenne, cumin, oregano, ground black pepper, lime juice and 1/4 cup olive oil. Whisk to combine. Place chicken in a medium bowl. Pour chili powder mixture over the chicken and toss to coat. Set aside.
- Prep Fajita Veggies: In a large bowl combine the red onions, yellow onions, bell peppers, garlic and fajita seasoning. Set aside.
- Cilantro Lime Sauce: Add Cilantro Lime Sauce ingredients to a small food processor and blend until smooth. Transfer to a small bowl, cover and place in refrigerator until later.
- Cook Chicken: Drizzle approx. 1 tablespoon olive oil over the flat top. Move around cooking surface to coat. Place chicken in the oil and let cook 3-4 minutes per side or until the chicken reaches an internal temp of approx. 162 degrees F. The chicken will continue to cook as it rests and will reach 165 degrees F. after rest time. Add additional olive oil, as needed, while cooking. Transfer chicken to plate to rest.
- Cook Veggies: While the chicken rests, cook the veggies. (You can clean off your flat top in between the chicken and veggies, if you desire but not necessary). Add a tablespoon of olive oil to the flat top. Add veggies and move around the cooking surface until they are soft, but firm -approx. 3-5 minutes. Transfer to plate.
- Slice Chicken: After meat rests, slice into 1/2 inch thick strips (but feel free to cut into bite-sized pieces if you prefer).
- Serve: Place fajita veggies on a tortilla of choice, top with sliced chicken, some Cilantro Lime Sauce, fresh chopped cilantro and a squeeze of fresh lime juice. Enjoy!
Notes
- Chicken Breasts: I HIGHLY recommend using boneless chicken thighs here, but you can use chicken breasts if you want. If you do use chicken breasts, I would either butterfly them OR cut them into chicken tenders. Adjust cook time, as needed.
- Dairy-Free: to make this dairy-free use a plain dairy-free yogurt instead of the Greek yogurt.
