What You Will Need
- broccoli – We bought florets and then trimmed them down to bite sized pieces.
- extra virgin olive oil – Just a bit to coat the broccoli so that it cooks perfectly.
- kosher salt & ground black pepper – To season the veggies and chicken.
- boneless, skinless chicken thighs – We love how juicy these get, but you could also use chicken breast, which will be a slightly dryer chicken meat.
- butter – A key component to getting the most juicy chicken thighs.
- fettuccini noodles – We love how hearty these are, but use your favorite type of noodles here.
- teriyaki sauce – Our post on how to make teriyaki sauce is one of the most popular on the site for a reason! It’s got better flavor than the grocery store version, so we suggest making a big batch of teriyaki sauce to keep in in the refrigerator for when you want a burst of flavor.
- for serving – sesame seeds, chopped green onions, and red jalapeño slices.
How To Make Teriyaki Chicken And Noodles
Start by preheating your oven to 425 degrees F. While your oven comes to temp, start gathering and prepping your ingredients.

Next, put the broccoli florets in a large bowl and toss them with 1 tablespoon of olive oil and a sprinkling of kosher salt. Really use your hands to massage the oil and salt into the broccoli for the best results. Spread the seasoned broccoli on a baking pan and place it in the preheated oven and let them cook for 10-15 minutes until they’re tender.
Alternate Cooking Method
If you’d rather not mess with the oven, steam your broccoli instead.

For the noodles, bring a large pot of water to a boil, add the fettuccini noodles, and follow the package instructions to cook them al dente. When they’re done cooking, drain and set aside.
A Note On Noodles
We chose fettuccini noodles because they’re familiar and fuss free, but you could also use rice noodles, chewy udon noodles, or ramen noodles. Just note that cooking time will vary depending on the noodle.

Next up is the chicken! Rub each chicken thigh with oil and then season both sides with salt and pepper. Bring a large frying pan to medium-high heat and add the butter so that it melts and coats the pan. After you’ve seared the chicken on both sides, reduce the heat to medium and let them cook until the internal temperature of the thickest part of the meat reaches 165 degrees F. Let the chicken rest and then slice it into 1-inch pieces.
Alternate Cooking Method
You can always add the chicken thighs to the broccoli sheet pan and roast the veggies and chicken together. This saves on time and dishes, but won’t yield quiet as juicy chicken as the stovetop method.

Now it’s time to combine all of those tasty ingredients! Place the noodles, broccoli, and chicken all in the same skillet that you used to cook the chicken in. Top it all with teriyaki sauce and mix everything together with some tongs.

Ingredients
- 2–3 cups broccoli florets
- 2 tablespoons extra virgin olive oil, divided
- kosher salt and ground black pepper
- 1 pound boneless, skinless chicken thighs
- 1/2 tablespoon butter (regular or plant-based)
- 1/2 box fettuccine noodles
- teriyaki sauce
- serving suggestions: sesame seeds, chopped green onions, red jalapeño slices
Instructions
- Prep: Preheat oven to 425 degrees F.
- Roast Broccoli: Put the broccoli florets in a large bowl and toss with 1 tablespoon olive oil and some kosher salt. Spread in a single layer on a sheet pan and bake for 10-15 minutes or until soft, but tender.
- Cook Noodles: Bring a large pot of water to a boil, add the fettuccine noodles, and cook to al dente according to the package instructions and drain.
- Cook Chicken: Meanwhile, rub chicken thighs with 1 tablespoon of olive oil and then season both sides with salt and pepper. Bring a large skillet to a medium-high heat, melt butter, and sear the seasoned chicken thighs for 2-3 minutes on each side. Continue cooking on medium heat until the internal temperature at the thickest part of the meat reaches 160 degrees F (use a meat thermometer – it will reach 165 degrees F while the meat rests).
- Rest & Slice: Transfer cooked chicken thighs to a cutting board to rest for 5 minutes and then cut into slices or bite-sized pieces.
- Combine: Add noodles to the skillet along with the chicken, roasted broccoli, and as much teriyaki sauce as desired. Toss to combine. Serve immediately and garnish with sesame seeds and chopped green onions.
- Serve: Enjoy immediately!
Notes
- Dairy Free: simply use a plant-based butter.
- Teriyaki Sauce: option to use a store-bought version or make our epic homemade teriyaki sauce!
- Gluten-Free: use your favorite gluten-free noodle.
- Broccoli: to make things easier you can easily steam your broccoli – I just love the crispiness of roasted broccoli so that is my recommendation!
- Sheet Pan Option: the recipe is best when made as-written, BUT if you really want to simplify things you can bake the chicken thighs and broccoli on a sheet pan at 415 degrees F. for approx. 15-20 minutes (or until chicken is fully cooked).
- Storage: leftover noodles can be kept in an airtight container for 4-5 days. Noodles tend to soak up extra sauce, so you may want to toss in some extra teriyaki sauce before serving.
