What You Will Need
- cilantro – One of our favorite green herbs that helps this sauce get that amazing green color.
- jalapeño peppers – Some people prefer to use a Peruvian pepper here, but since they can be hard to find, we went with one that tends to be available at your grocery store.
- green onion – Adds a subtle warmth.
- lime – A bit of citrus to help even out all the other bold flavors. You could always sub with lemon juice if you’re in a pinch.
- plain Greek yogurt & mayo – Together these two make this sauce the creamiest!
- rice vinegar – Has a sweet and mild flavor.
- olive oil – Just a bit to help everything blend together.
- kosher salt & ground black pepper – Don’t forget the OG seasonings!

Next, place everything into your food processor and blend until smooth. Now give it a little taste and adjust the salt, jalapeño, or lime as need be. If you’re going for a more spicy Peruvian green sauce, blend in more of the jalapeño membrane and seeds.

Ingredients
- 1 1/4 cup fresh cilantro, chopped
- 1–2 jalapenos, remove seeds and membrane

- juice of 1 lime
- 1/4 cup + 2 tablespoons plain Greek yogurt

Instructions
- Blend: Add ingredients to a high-powered blender or food processor. Blend until smooth.
- Taste: Taste and add additional salt, jalapeno or lime juice – as desired.
- Serve: Serve with some Peruvian Chicken or Grilled Steak!

Can you substitute mayo for anything

Hi Timothy – you could probably try and just use more Greek yogurt instead – but then taste and maybe adjust the salt since you might be missing some without the mayo.
