- delicata squash – One of our favorite winter squashes thanks to its edible skin and sweet flavor.
- olive oil – Just a bit to make this squash just the right amount of tender.
- kosher salt & ground black pepper – Simple seasonings to heighten all of the other natural flavors.
- parmesan cheese – We love this cheese for it’s slightly nutty flavor.
- fresh sage – A flavor that’s similar to rosemary, but a bit more complex and warm.
How To Roast Delicata Squash
Start by preheating your oven to 425 degrees F. While your oven comes up to temp, start prepping your squash. If you’re wondering how to cut a delicata squash, it’s super easy. Use a sharp knife to cut off the stem end and then cut down through the middle of the whole squash, lengthwise.
Next, use a spoon to scoop out the seeds. Place the halved squash on a cutting board and cut it into half inch slices.
Place the squash pieces on a parchment lined baking sheet and drizzle them all with some olive oil and sprinkle on the kosher salt and black pepper. Toss everything together right on the pan and then situate them so that there is plenty of room between them all. sprinkle everything with freshly shaved parmesan and chopped sage.
How Long To Roast Delicata Squash
Place the baking sheet in the preheated oven and then roast delicata squash for 13-18 minutes. Cooking time will vary depending on the size of your squash and your desired level of softness. It’s safe to say that they’re done when you notice the flesh has turned a gorgeous golden brown color. Description
Our super easy Roasted Delicata Squash recipe is a delicious side dish made with only 5 simple ingredients! Perfect for easy weeknight dinners!
Ingredients
- 2–3 medium delicata squash
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 1 cup parmesan cheese, freshly grated
- 1/4 cup fresh sage, thinly sliced
Instructions
- Prep: Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper.
- Cut Squash: Use a sharp knife and cutting board to remove both ends of each delicata squash. Then cut the squash in half, lengthwise. Use a spoon to scoop out the seeds and membranes on the inside of each half. Place the hollowed out squash halves on the cutting board and cut into 1/2 inch thick slices, moving from one end to the other (they will look like half moons).
- Prep Squash: Place the squash slices on the parchment-lined baking sheet in a single layer, drizzle with olive oil and season with salt and pepper, toss to coat. Top with parmesan and fresh sage on top of the squash evenly.
- Bake: Move the entire sheet pan to the preheated oven to bake for 13-18 minutes or your desired softness.
- Serve: Serve with any of your favorite main dish recipes!
