We love a good ol’ one-pot meal, and this one is among the best when it comes to flavor thanks to the slightly smokey creole seasoning and juicy sausage. What You Will Need
- extra virgin olive oil – A simple oil for sautéing
- andouille sausage – A juicy pork sausage that you can find at your local grocery store.
- garlic & yellow onion – Classic veggies that give the best warming flavors.
- green bell pepper and red bell pepper – Add a pop of color and mild crunch.
- jalapeño – Because the seeds are removed, this is actually a quite mild veggie!
- celery stalks – Adds a nice fresh texture.
- kosher salt & ground black pepper – Cabinet staples to help everything else shine!
- Creole seasoning – A blend of seasonings that add undeniable flavor to every bite.
- onion powder and garlic powder – Just a bit more of the classics.
- diced tomatoes – Helps to add some nice acid.
- chicken broth – Gives your rice even more flavor. You can use chicken stock, but just add a bit more salt as this option isn’t seasoned like broth.
- long grain rice – Jasmine rice would work great here. Different types of rice like brown rice will change the texture and require different cooking times.
- frozen okra – An optional ingredient that adds a mild flavor similar to green beans.
How To Cook Sausage And Rice
Start by gathering and prepping all of your ingredients. Most of the work is in the upfront of this recipe. The good news is that when this is done, the rest is mostly hands off!
Next heat up some olive oil in the bottom of a cast iron skillet or dutch oven. Then add your sliced sausages and sauté them for 1-2 minutes and then set them off to the side.
Next, add the garlic and move it around the pan for about 30 seconds or when it starts to become fragrant. Now dump in the onion, bell peppers, jalapeño, celery, salt, and pepper. Move everything around the pan for 2-3 minutes or until the veggies are softened. Next, add the creole seasoning, onion powder, garlic powder, diced tomatoes, chicken broth, and uncooked rice.
Stir everything together and bring it all to a simmer. Then cover and let it cook for 15-20 minutes or until the rice is fully cooked. Stir the mixture every once in a while while the rice cooks and add a splash or two of broth if the rice gets dry. Last but not least, add the seared sausage back to the skillet & the frozen okra, if you chose to use it. It really is a great addition to add another veggie that’s mild in taste. Stir to combine and keep on a low heat until everything is warmed through.
Smoked Sausage Anyone?
Add an extra smokey flavor to this dish and use smoked sausage! Simply place the entire sausage directly on the grates of a smoker at 225 degrees F for 1.5 – 2 hours. Then cut it into slices and use as directed in this recipe. Use our smoked sausage tutorial for a stress free smoking experience.

Ingredients
- 1 tablespoon extra virgin olive oil
- 12oz package of Andouille sausage, cut into 1/2 inch slices
- 1 tablespoon garlic, minced
- 1 small yellow onion, diced
- 1 green bell pepper, cut into large chunks
- 1 red bell pepper, cut into large chunks
- 1 jalapeño, remove seeds/membranes and diced
- 2 celery stalks, sliced
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1/2 – 1 teaspoon Creole seasoning
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 (14oz) can of diced tomatoes, undrained
- 2 1/2 cups chicken broth
- 1 cup long grain white rice, uncooked
- optional: 1/2 cup frozen sliced okra
Instructions
- Sear Sausage: Bring a large cast iron skillet to a medium-high heat and add oil to coat the bottom of the pan. Add sausage slices to the hot pan and move around to sear for 1-2 minutes. Remove sausage from the pan and set aside.
- Sauté: Keeping the large skillet at a medium high heat, add garlic and move around until fragrant; about 30 seconds. Now add onion, bell peppers, jalapeño, celery, salt and pepper. Move around the pan until softened; approximately 2-3 minutes.
- Season & Simmer: Add Creole seasoning, onion powder, garlic powder, diced tomatoes, chicken broth, and rice. Stir to combine. Bring to a simmer. Cover and let cook 15-20 minutes or until rice is fully cooked. Stir occasionally while the rice cooks and add a splash or two of broth if the pan gets dry.
- Warm: Add the seared sausage back to the skillet & the frozen okra, if using. Stir to combine and keep on a low heat until warmed throughout.
- Serve: Enjoy immediately!

- Smoked Sausage: option to use smoked sausage in this recipe for that extra smokey flavor. Simply place the entire sausage directly on the grates of a smoker at 225 degrees F for 1.5 – 2 hours. Cut into slices and use as directed in this recipe.

We made this in the Instant Pot last night, and it was so easy and delicious! I added a bay leaf, fresh tomatoes from my garden, and a mix of smoked and hot Hungarian paprika to give it extra depth of flavor, which were fantastic additions. I was a little nervous because I ended up with more liquid than expected, but I simmered it a bit longer and then let it rest. It turned out perfect—the rice absorbed most of the liquid beautifully. Next time, I might add fire-roasted tomatoes for even more flavor!
