What You Will Need
- boneless, skinless chicken breasts – we really like using chicken breasts for this one but you could use chicken thighs too.
- buffalo sauce – feel free to make your own homemade sauce ahead of time or use your favorite store-bought versions. We love Primal Kitchen’s buffalo sauce!
- chicken broth – this is only needed if you are using the Instant Pot to cook your chicken. The other cooking options will use water.
- tortillas – feel free to use any tortillas – flour, corn, gluten-free, grain-free, etc. We love these!
- blue cheese crumbles – you simply can’t have buffalo anything without a little blue cheese!
- green onions & romaine or butter lettuce – a little green and crunch added to the taco.
- ranch dressing – we love to use some of our homemade ranch dressing or grab some of your favorite store-bought ranch – either way it will be delicious!
Best Ways For Cooking Buffalo Chicken
In this recipe we have included instructions for making the buffalo chicken in the slow cooker, Instant Pot, or on the stove top. Use the one that works for you!
- Slow cooker – this option takes the longest but you can just set-it-and-forget-it in the morning and it’s ready at the end of the day!
- Instant Pot – this only takes about 8-10 minutes in the Instant Pot but make sure you also account for the time the IP takes to get to pressure and releasing the pressure.
- Stove top – if you don’t have a slow cooker/Instant Pot or you just prefer to make it on the stove top, this is a great option – it will be ready in under 30 minutes!
Freezing Buffalo Chicken
- Can I put frozen chicken in the crockpot? You can! The end result might be a bit more watery and you will have to adjust your cook time to make sure that your chicken reaches an internal temp of 165 degrees, but you can definitely do it.
- Can I freeze buffalo chicken before cooking? Yes! You can put your chicken and buffalo sauce in a large ziplock bag or freezer-safe bag and place in a freezer for up to 3 months. This would work for the slow cooker option only.
- Can I freeze buffalo chicken after cooking? Yes! Once the cooked buffalo chicken has cooled you can put it in an airtight container in the freezer for up to 3 months.
Meal Prep
These buffalo chicken tacos are such a great option for meal prep! The buffalo chicken can easily be prepped at the beginning of the week for lunches. Just make sure you keep the chicken and cold toppings in separate containers to make it easier to reheat the chicken.
How To Make Buffalo Chicken Tacos
Place your chicken in the slow cooker with a sprinkling of salt and pepper.
Pour in the buffalo sauce.
Cook on high for 3-4 hours or low 6-8 hours.
Shred the chicken with two forks.
Add a little more buffalo sauce, if desired.
