Breakfast just got a whole lot better this apple season! During that time of year when we visit the local apple orchard we love finding new apple recipes to make with all of our fresh apples. We have made apple pie, homemade applesauce, but an apple pancake is perfect for your next weekend morning. These simple apple pancakes are golden brown on the outside and light and fluffy on the inside! Definitely a family favorite that we know you will be making again and again.

What You Will Need
- oat flour and rolled oats – option to make your own homemade oat flour or pick some up at your local grocery store.
- ground cinnamon – wonderful warm spices that pair nicely with cooking apples.
- coconut sugar – add a little bit for a touch of sweetness!
- kosher salt – just a pinch of salt or two helps the structure of the fluffy pancakes.
- baking powder – perfect for making your apple pancakes so fluffy!
- applesauce – added for a natural sweetness and it brings moisture to the batter.
- almond milk – a great option to keep your batter dairy-free, but any non-dairy milks or regular milk will work!
- egg replacers – feel free to pick-up your own or mix flax meal and water together to make flax eggs.
- vanilla extract – just a splash for some added flavor.
- sweet apples – option to use a green apple or red apples, like honey crisp apples.
- coconut oil – brings a wonderful smooth texture to the pancake batter.
- olive oil – drizzled in the fry pan or griddle to keep the pancakes from sticking.
How To Make Apple Pancakes
The first steps to making this easy recipe are to mix together the dry ingredients and wet ingredients in separate bowls. Now add the wet ingredients to the dry ingredients, mix to combine in a large bowl. Whisk in the coconut oil and then gently fold in the chopped apples.
Let the batter sit for about 3-5 minutes to thicken. Next, bring a large skillet or flat top griddle to a medium high heat, coat with oil, and pour about a half cup of batter on it to cook for 2-3 minutes. Flip with the surface of the pancake has small bubbles and the outside edges begin to turn golden brown. Pro tip – place cooked pancakes on a baking sheet in a warm oven while you finish cooking the rest of the pancakes. Everyone loves a warm pancake!

Description
Our healthy Apple Pancake recipe is the perfect breakfast option that is also gluten-free, dairy-free and plant-based!
Ingredients
Dry Ingredients:
- 2 cups oat flour
- 1/2 cup rolled oats
- 1 1/2 tablespoons ground cinnamon
- 2 tablespoons coconut sugar
- 1/2 teaspoon kosher salt
- 2 1/2 tablespoons baking powder
Wet Ingredients:
- 1/2 cup unsweetened applesauce
- 2 cups unsweetened almond milk
- 2 egg replacers or flax eggs (1 flax egg = 1 tablespoon ground flax + 2.5 tablespoons water mixed together and let sit 5 minutes)
- 2 teaspoons vanilla extract
Other Ingredients:
- 1 cup apple, diced
- 2 tablespoons coconut oil, melted
- 1 tablespoon extra virgin olive oil (avocado or coconut)
Instructions
- Place dry ingredients in a medium bowl and whisk together.
- Combine wet ingredients in a separate bowl.
- Pour wet ingredients into dry ingredients and whisk to fully combine in a large mixing bowl. Then whisk in the melted coconut oil.
- Gently mix the diced apples into the pancake batter. Allow mixture to sit 3-5 minutes, it will thicken slightly.
- In the meantime, bring a cast iron skillet to a medium-high heat and add enough oil to just cover the bottom of the pan.
- Once pan is hot and ready, use a 1/2 cup to scoop out the pancake mix and pour into middle of the pan. Use the measuring cup or back of a spoon to flatten the mixture and make it into a round pancake.
- Let pancake cook 2-3 minutes per side or until the edges start to bubble slightly (if you don’t flatten them as much you might want to cook closer to 3-4 minutes per side).
- Serve immediately with real maple syrup and additional ground cinnamon on top.
Notes
- Apples: we used a Granny Smith apple, but feel free to use any variety of apple.
- Egg Replacer: we used this egg replacer and it worked SO well!
- Storage: leftover pancakes can be stored in an airtight container in the fridge for 3-4 days.
