The Best Chicken Hibachi Recipe
Our super quick and easy hibachi chicken recipe is one of our all-time favorite options for dinner! For years, our whole family has been going to our local hibachi restaurants to enjoy their chicken hibachi with a hibachi chicken sauce, also known as yum yum sauce. Now that we have a flat top grill on the deck, we knew we needed to create a hibachi style chicken recipe to make at our own home. And, trust us, this homemade hibachi chicken recipe does not disappoint! Feel free to make a larger batch to impress a crowd or meal prep for the week.

What You Will Need
- yum yum sauce – it’s has its name for a reason, option to make your own homemade sauce or go to the local grocery store for a store-bought version.
- butter & minced garlic – combine these for the best garlic butter that is added throughout the entire cook time.
- olive oil – drizzled on the hot cook surface for to help sauté the rice, fresh veggies, etc.
- yellow onion – a mild onion that is a great addition to the fried rice and vegetables.
- eggs – a traditional ingredient for any fried rice recipe!
- cooked rice – leftover rice that is about a day or two old works really well! We used jasmine rice (white rice) but brown rice would be great too.
- soy sauce – another essential ingredient when making homemade hibachi chicken.
- green onions – perfect for garnish on top!
- carrots, zucchini, and mushrooms – love this combination of fresh vegetables, but feel free to use what you have on hand. Bell peppers would be good too.
- salt and pepper – simple ingredients that are always a must when cooking any cut of meat.
- boneless, skinless chicken thighs – we highly recommend chicken thighs but option to sub with boneless skinless chicken breasts.
How To Make Hibachi Chicken
The first steps to making this easy recipe are to put all of the yum yum sauce ingredients in a small bowl and mix together. Option to transfer that sauce to a squeeze bottle, if you want.
Now place the softened butter and garlic in a bowl and mix to combine.
Then prep all of the hibachi chicken ingredients so that they are ready to go before cooking anything. The cooking process goes fast so it is highly recommended to have it all ready.
Once you are ready to start cooking, bring your Blackstone griddle or large skillet to a medium heat, add a tablespoon of oil, and then the onions. Give it a good stir to cook, add whisked eggs, and continue moving around until cooked through. Next add a tablespoon of garlic butter, rice, and soy sauce. Continue moving everything around and tossing to combine and warm through. Fold in green onions and transfer it all to a bowl or plate.
Now add another tablespoon of olive oil and add carrots to cook for about 5 minutes or until soft, but firm. Then add the zucchini, onions, and mushrooms. Continue moving them around with a large spatula and add some garlic butter to melt. Transfer cooked veggies to a plate.
Season chicken thighs with some salt and pepper. Add another drizzle of oil to your cooking surface and sear the outside of the chicken thighs. They will cook for about 3-5 minutes per side or until their internal temp reaches 165 degrees. Add a little more garlic butter and soy sauce halfway through the cook time. Remove from the heat, let rest on a cutting board, and then cut the chicken into bite-sized pieces.
Now that everything is cooked, it is time to plate your dinner. Using the fried rice as a base, add some veggies, chicken, and a generous pour of the creamy yum yum sauce. Garnish with green onions or sesame seeds and enjoy!

Yum Yum Sauce:
- 3/4 cup mayo
- 1 tablespoons ketchup
- 1 tablespoon granulated sugar
- 2 teaspoons rice vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/8 teaspoon ground black pepper
Garlic Butter:
- 5 tablespoons butter, room temp
- 1 tablespoon garlic, minced
Hibachi Fried Rice:
- 1–2 tablespoons extra virgin olive oil (sub avocado oil)
- 1/2 sweet yellow onion, diced
- 2 eggs, whisked
- 1–2 tablespoons garlic butter
- 4 cups cooked rice, preferably day-old*
- 1–2 tablespoons soy sauce, more as desired
- 1/4 cup green onions, sliced
Hibachi Veggies:
- 1–2 tablespoons olive oil (sub avocado oil)
- 3 medium carrots
- 1 sweet yellow onion
- 3 small/medium zucchini
- 1 pint mushrooms, sliced
- 1 tablespoon garlic butter
- kosher salt and ground black pepper
Hibachi Chicken:
- 6 boneless, skinless chicken thighs
- salt and pepper
- 1 tablespoon olive oil (sub avocado oil)
- 1–2 tablespoons garlic butter
- 1 tablespoon soy sauce
Instructions
- Prep: With a recipe like this, regardless of whether you are cooking on a flat top (like a Blackstone) or large cast iron skillet – everything cooks pretty quick so it really helps if everything is prepped and ready to go before you start cooking anything.
- Make Yum Yum Sauce: Add ingredients to a small bowl and whisk to combine. Set aside.
- Garlic Butter: Combine Garlic Butter ingredients in a bowl. Set aside.
- Fried Rice: Bring flat top (or cast iron skillet) to medium-high heat. Add a tablespoon of oil. Add onions and move around until softened. Add whisked eggs and move around until cooked. Add 1 tablespoon garlic butter and let melt. Add rice and top with soy sauce. Move everything around until it is mixed together and rice is warmed through. Feel free to add another tablespoon of garlic butter and season with any salt and pepper you desire. Fold in the green onions and then transfer to a plate. Set aside.
- Veggies: Keep cooking surface at medium high heat. Add oil. Add carrots and move around until they are soft, but firm (approx. 5-6 minutes). Add onion, zucchini, and mushrooms as well as the garlic butter. Season the veggies with salt and pepper. Move around pan until all veggies are soft, but firm. Transfer to plate and set aside.
- Chicken: Season chicken with salt and pepper. Add oil to cooking surface and place chicken in oil. Let cook approx. 3-5 minutes per side or until the chicken reaches an internal temperature of 165 degrees F. About halfway through the cooking process add some garlic butter and soy sauce. Remove and let chicken rest 5 minutes. Cut into pieces.
- Assemble + Enjoy: Build your bowl or plate by adding some fried rice, veggies, and chicken to it. Drizzle with as much Yum Yum Sauce as you desire as well as any extra sliced green onions and enjoy!
Notes
- *Day-Old Rice: day-old rice just cooks up better when making fried rice, it’s recommended but not required.
- Blackstone: we used a flattop/Blackstone, but you can definitely also just use a large cast iron skillet!
- Feel free to to just make the Hibachi Chicken + Yum Yum Sauce and serve however you wish – I tend to make the fried rice + veggies too, but totally up to you!
- Storage: keep leftover hibachi chicken an in airtight container in the fridge for 3-4 days.
