
Easy Kale Tomato Salad
This light and refreshing summer salad is perfect for hot days when you don’t feel like cooking! It is fully of texture and the mustard dressing is a perfect pairing with the edamame and tomatoes!



Why is it Best to Massage Kale
Massaging the kale with the mustard vinaigrette allows the lemon juice and olive oil to actually begin to break down the kale (which can otherwise be a little tough). The result is a more tender, more delicious salad!

Ingredients
Mustard Viniagrette:
- ½ cup extra virgin olive oil
- 3 tablespoons dijon mustard
- 2 tablespoons apple cider vinegar
- ½ teaspoon yellow mustard
- splash lemon juice
Kale and Tomato Salad:
- 2 cups fresh kale, chopped (tightly packed)
- 2 beefsteak tomatoes, diced
- 1 cucumber, sliced
- ½ cup edamame, shelled
- 1 tablespoon yellow onion, finely diced
- 1 teaspoon kosher salt
Instructions
- Make Vinaigrette: In a small bowl, add ½ cup extra virgin olive oil, 3 tablespoons dijon mustard, 2 tablespoons apple cider vinegar, ½ teaspoon yellow mustard, and a splash lemon juice. Whisk and set aside.
- Build Salads: Ensure 2 cups fresh kale are chopped to your liking and divide between two salad bowls. Pour a little vinaigrette on top and massage into kale. Divide tomatoes, cucumber, ½ cup edamame, and diced onion between the bowls.
- Serve: Sprinkle with kosher salt and enjoy with the remaining vinaigrette!
