What You Will Need
- Strawberries – the main player here and nothing says summer better than perfectly ripe strawberries!
- Coconut sugar – this is the sweetener we used but feel free to substitute with organic cane sugar, or granulated sugar. So nice to pick the one that works for you!
What Does It Mean To Macerate Strawberries?
This is the process of putting fruit in sugar in order to soften the fruit and release its juices. The fruit will soak up the flavor of these juices as they continue to soften in the sugar.
How Long Can You Let Them Macerate?
In this recipe we let the strawberries macerate for about 30 minutes but the timeframe is really up to your personal preference. The longer they sit the softer the strawberries will get and the more liquid they will release.
How Should I Serve Macerated Strawberries?
In our opinion they would be perfect on some Gluten Free Strawberry Shortcake with some Dairy Free Whipped Cream! We also love making these cute little strawberry shortcake parfaits or you could also use them on top of angel food cake or simply on some vanilla ice cream.
Storing Macerated Strawberries
You can keep them in an airtight container in the fridge for up to 4 days and 3-6 months in the freezer. If I have a lot of them I will freeze them in small containers so that I only have to thaw as much as I need. When you do need to thaw them you can just place them in the fridge.
When Are Strawberries In Season?
It really varies across the country. In the middle of the country it is typically May-June. Here in Minnesota we like to pick in mid-late June. But if you live in the southern part of the country your strawberry season is usually late April – May. Lots of areas have pick-your-own strawberry farm which is something we love to do every year! Otherwise checkout your local farmer’s markets!
How To Make Macerated Strawberries
Step one – Place strawberries in a colander and rinse thoroughly.
Step two – Use a knife to remove the top and slice in half.
Step three – Sprinkle on the sugar.
Step four – Mix and let sit for 30 minutes.
Step five – Enjoy any way you want!

Ingredients
- 2–3 cups fresh strawberries, sliced
- 2–3 tablespoons coconut sugar (*see notes)
Instructions
- Place strawberries and sugar in a bowl.
- Stir to combine.
- Let sit out on the counter, stirring every so often, for approximately 30 minutes or until the strawberries get juicy.
Notes
- Coconut Sugar: you can use organic cane sugar or just regular granulated sugar here in place of the coconut sugar.
- Juiciness: most traditional recipes call for granulated sugar here, which you can totally use! This version of the recipe is calling for coconut sugar (which would be paleo) or organic cane sugar (which is unrefined) to keep things a bit healthier. That being said, this recipe works perfectly with granulated sugar and does get a bit more juicy that way – do what works best for you!!!
