I know so many of you ask me for my favorite eggless whole30 breakfast that is ALSO work-friendly. Before I began blogging full-time in January, I took my breakfast to work with me every day! I am not a morning person (and I have 3 kids) so getting up early enough to make breakfast, much less sit down and eat it wasn’t really happening. And I can only eat hard-boiled eggs for so many days until I get sick of them.
Enter Make Ahead Breakfast Stuffed Sweet Potatoes. They are Whole30, Paleo, Dairy-Free and Vegan-Friendly, Gluten-Free and so yummy!
What really puts them over the edge though is using the right apple. You don’t want a mushy, grainy apple. And you want the flavor to be able to compete with that of a sweet potato. Pazazz® apples do both of those things: they are incredibly flavorful and perfectly crisp, which make them the perfect topping for these on-the-go breakfasts! They are currently in season so head out and grab some! (definitely kid-approved!)
One quick tip before we dive into the recipe since I didn’t write it out in the recipe below. Many of you probably know how to cook sweet potatoes, but in case you don’t:
How to bake sweet potatoes in the oven:
- Take large sweet potato and wash it off.
- Pat dry with paper towel and pierce 3-4 times with fork.
- Rub all over with olive oil or avocado oil.
- Sprinkle with salt.
- Bake at 350 for one hour or up to an hour and 15 minutes, depending upon how thick it is.
You can cook them in an instant pot, but in my (somewhat limited) experience, the skin just doesn’t get crispy that way, which I think is preferable for this recipe! But do whatever works best for you!

Description
Make Ahead Breakfast Stuffed Sweet Potatoes (Whole30 + Dairy-Free) – a delicious eggless whole30 breakfast that is perfect for on-the-go!
Ingredients
- 1 baked sweet potato
- 1 medium Pazazz apple, cut into bite-sized pieces
- 1 Tablespoon ghee (or coconut oil)
- 1/2 – 1 Tablespoon ground cinnamon
- 2 Tablespoons Cinnamon Cashew Butter (or more to taste)
Instructions
- Take medium skillet and bring to medium-high heat.
- Add ghee and allow to melt.
- Add apples and move constantly around the pan, letting cook for 2-3 minutes.
- Add cinnamon and stir to coat.
- Cut open sweet potato and stuff with apples.
- Drizzle with cashew butter and sprinkle with any additional cinnamon you want.
- Either eat immediately or place in glass storage container to bring to work in the morning.
Notes
- If you want to store the cooked apples and nut butter separately and stuff your sweet potato right before eating – that works too!
- Eat cold or reheat in microwave or oven.
- Of course feel free to make in batches!

So I shared a link to this recipe in a whole30 beginners fb group, and a woman got on and scolded me that this recipe a) doesn’t give a balanced plate and b) is SWYPO. What are your thoughts about this? I figure the answer to the first is to add some protein to the plate. As for the second, I don’t think it is. I mean, I think it’s amazingly delicious, so it’s not a poor man’s substitute for anything…

Hi Elisabeth! I agree with you on both points! I always suggest to people to eat this with half an avocado and maybe a breakfast sausage or two to round out the meal! Or it can be a side dish for dinner! As for SWYPO, I don’t think this is trying to duplicate or replicate a poor food choice or perpetuating a bad habit. I don’t really know what it would be replicating. And I can tell you as the person who came up with the recipe, I only came up with it because I love eating apples and almond butter together (not SWYPO) and figured that combo would be good with sweet potato because apples and sweet potato also go good together! SWYPO can be a bit of slippery slope and I think can differ person to person depending on their own personal bad habits, in my humble opinion! Sorry you got scolded! But I agree with you! Glad you are here!! 🙂
