Whole30 Sloppy Joe Bowls
There are so many great, classic flavors to an amazing sloppy joe and this recipe gives it a great spin by serving it in a bowl with sweet potatoes, pickled onions, and pickle slices! This results in a great Whole30 option that will really wake-up your tastebuds. Even the kids will love it. Perfect for a busy weeknight!
What You Will Need
- sweet potato – cut them into nice thick slices – perfect for scooping up that sloppy joe goodness!
- olive or avocado oil – just a drizzle to help with roasting the sweet potato slices.
- dijon mustard – a little tang on top!
- sliced pickles – use your favorite – we love this brand!
- pickled red onions – these quick homemade pickled red onions are so easy to have on hand in the fridge!
- garlic: because pretty much every savory recipe is better with garlic!
- yellow onion + red onion: I love using two kinds of onions because it adds in some depth of flavor.
- bell pepper: adds a bit of crunch. You can also add in diced carrots if you want!
- kosher salt + ground black pepper: helps bring out the other flavors.
- Ground Beef: we love Country Natural Beef, it’s simply the best!
- dijon mustard + yellow mustard + apple cider vinegar: these add in acidity to help round out the flavors.
- paleo ketchup + tomato paste: to help create that tomato-sauce base.
- coconut aminos : adds in some umami flavors.
- chili powder: this adds a pop of flavor and you can add more if you want to up the spice.
How To Achieve The Perfect “Sloppy Joe” Consistency
If you want your sloppy joe bowls to be more “saucey” you can add more ketchup and tomato paste for more of a tomato-base. Just add a little at a time until it is right for you!
Looking To Spice It Up
You can easily adjust the spice level to your personal preference. Just add more chili powder if you are looking to increase the spice level or even some cayenne pepper!
How To Make Sloppy Joe Bowls
Chop the onion and green pepper.
Gather the ingredients for the sloppy joe mix.
Cook up your sloppy joe mix in a cast iron skillet.
Grab your quick pickled onions out of the fridge.
Assemble your sloppy joe bowl!
Best Way To Serve Sloppy Joe Bowls
Simply roast your sweet potato slices in the oven with a drizzle of oil and sprinkle of kosher salt, place them in a bowl, and scoop on the sloppy joe mix! Next, top the sloppy joe mix with pickled red onions, sliced pickles, and a bit of dijon mustard. This combo is SO GOOD!!

Ingredients
Sweet Potato Slices:
- 1 large sweet potato, cut into 1/4 inch slices
- 1 tablespoon extra virgin olive oil (sub avocado oil)
- 1 teaspoon kosher salt
Sloppy Joe Mix:
- 2 tablespoons ghee or olive oil
- 1–2 tablespoons garlic, minced
- 1/4 cup yellow onion, diced
- 1/4 cup red onion, diced
- 1/2 – 1 green bell pepper, diced
- 1 pound ground beef
- 1 teaspoon dijon mustard
- 1 teaspoon yellow mustard
- 3 tablespoons paleo ketchup
- 2 tablespoons coconut aminos
- 1 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons tomato paste
- 1 teaspoon chili powder
- 1 teaspoon apple cider vinegar
Toppings/Additions:
- dijon mustard
- sliced pickles (I like this brand)
- pickled red onions
Instructions
- Preheat oven to 415 degrees F.
- Place your sweet potato slices on a baking sheet. Drizzle with a little olive oil and massage to coat both sides. Sprinkle with a little kosher salt.
- Place in the oven, middle rack, and let roast 10-12 minutes or until firm, but tender.
- Meanwhile, bring a large cast iron skillet to medium-high heat. Add ghee or oil and swirl to coat the pan.
- Add garlic and move around the pan until fragrant, about 10-20 seconds.
- Add onions and diced bell pepper. Sauté for 2-3 minutes, allowing onions to soften.
- Add ground beef to the pan. Move around the pan until beef is cooked through, about 5-10 minutes. Drain excess grease.
- Add dijon mustard, yellow mustard, ketchup, coconut aminos, kosher salt, pepper, tomato paste, chili powder and apple cider vinegar.
- Stir to combine.
- Taste and adjust: if you want more sloppy joes more “saucey” simply add additional ketchup and tomato paste. Otherwise, adjust any salt or pepper, as desired.
- Serving: place a few slices of roasted sweet potato to a bowl and place some of the sloppy Joe mixture next to it. Top with sliced pickles, pickled onions and a little extra dijon mustard. Enjoy!
Notes
- Add-In: feel free to add in some diced carrots for even more fiber and bit of crunch.
- Spice it up: you can add in more chili powder or even some cayenne pepper or red pepper flakes if you want it spicy!
- Double it: this is such a great meal to have leftovers of – we always double the recipe and eat it for lunch the next few days!

This is a stand out recipe! I’ve made it a few times and my family gobbles it down. I always have Manwich in the pantry for emergencies but I also always have the ingredients for these sloppy joes too. I double the recipe each time since most of my family goes back for seconds. They use buns too but I make it as a bowl. And it’s not a big deal if I don’t have a bell pepper or both kinds on onions. I’ll just improvise with what I have. Thank you for another great recipe.
I do have a question about the serving size at the bottom. Is the 6oz just of the meat or of meat and the sweet potatoes?

You could add whatever you wanted to this bowl. Put it over rice. Add jalapeno. It’s so yummy and a great way to meal prep for the week!
