We know everyone has their favorite version of avocado toast and this is ours! It’s simple, classic, just spicy enough and covered in a beautiful runny egg. If you are looking for a new favorite breakfast, this seriously needs to be it. Avocado rose or not, this is an awesome way to start your day. Sprinkle with your desired amount of red pepper flakes and some salt and boom – super-awesome breakfast complete.

What You Will Need
- sourdough bread – we love grabbing sourdough from our local grocery store, but you can use any variety of bread.
- avocado – option to add mashed avocado, sliced avocado, or make an avocado rose… takes a little time but it sure looks amazing!
- roma tomato – in the recipe card we talk about how to easily roast the roma tomato, it adds a really nice flavor to this easy recipe.
- fresh egg – in a matter of minutes you can make a perfectly runny egg by poaching it on the stovetop.
- kosher salt & red pepper flakes – simple seasonings that add some flavor and as much heat as you want!
How To Make Avocado Toast With Egg
To start, you will want to make a perfectly poached egg in a saucepan of simmering water. While the egg is cooking you can toast your slice of sourdough and roast the tomato pieces in the oven for about 5-7 minute or until they are slightly charred. Now it is time to assemble your toast. Place the toasted bread on a plate, top with avocado, charred tomatoes, poached egg, and then your desired amount of seasonings!

This simple breakfast can be enjoyed all on its own, but if you are looking to add some more items to this breakfast you could serve with a raspberry muffin, mango smoothie, or a slice of banana bread. We also love to enjoy this classic avocado toast as a hearty snack in the afternoon!

Description

Ingredients
- 1 slice sourdough bread (toasted, if you want)
- 1/2 avocado (mashed, sliced, or rose)
- 1 roma tomato, diced
- 1 egg, poached
- kosher salt
- red pepper flakes
Instructions
- Preheat oven to 350 degrees F.
- Place diced tomato on cookie sheet and sprinkle with a little kosher salt.
- Roast for 5-7 minutes, checking periodically and stirring about halfway through. They should start to char just a little and then they are ready to come out.
- Take your sourdough bread/toast and add avocado, roasted tomatoes and poached egg on top.
- Sprinkle with a little salt and your desired amount of red pepper flakes.
- Serve immediately.
