- Chicken Wings – love using a mixture of flat wings and drumettes. Just make sure they are fully thawed before cooking. Using wings that are frozen or slightly frozen results in a longer cook time and tough meat.
- Olive Oil – swap it out for avocado oil to make these crispy chicken wings Whole30/Paleo compliant.
- Salt and Pepper – a must when cooking any type of meat, but highly recommend adding the rest of the spices for the most incredible flavor.
How To Make Chicken Wings On The Blackstone

Step 1 – Mix up the spices and then toss with wings to coat.

Step 2 – Preheat the flattop griddle, drizzle with oil, and add the wings.
Pro Tip
The drumettes are thicker and will therefore cook for longer. Place them on the cooktop first, cook for 3-5 minutes, and then add the rest of the flat wings. That way they will all finish around the same time.

Step 3 – Rotate all of the chicken wings every 3 minutes until fully cooked.
Pro Tip – Track Internal Temperature!
Use a digital meat thermometer to keep track of the internal temperature at the thickest parts of the chicken wings. Pull them off the heat at around 162 degrees F. They will rise to a safe temperature of 165 degrees F while they rest.

Erin’s Testing Tips: What We Learned
- A Blackstone griddle gets pretty hot, even on low. Make sure you preheat the griddle, but then keep it on low. The skin will get crispy without burning.
- Rotate every 3 minutes! This also helps to prevent any burn spots.
- Drumettes cook longer than flat wings. If you want them all done around the same time, put the drumettes on 3-5 minutes before the flat wings.

Blackstone Chicken Wings FAQs
It can be done but is not recommended. The cook time will be significantly longer and as the wings thaw, they will release quite a bit of water which is not helpful for a crispy wing. Let the wings fully thaw before cooking!
A neutral oil with a high smoke point is best, like avocado oil.
Simply place them in an airtight container in the fridge for 3-4 days.
They can be reheated in the microwave or toss them back on a hot griddle or skillet on the stove top to keep the crispness.

- 3 pounds chicken wings, fresh or thawed
- 1 tablespoon extra virgin olive oil, sub avocado oil

- Make Dry Rub: In a small bowl, add 1 tablespoon kosher salt, 1 tablespoon dried oregano leaves, 2 teaspoons onion powder, 2 teaspoons garlic powder, 2 teaspoons paprika, ½ teaspoon ground turmeric, ½ teaspoon ground black pepper, ¼ teaspoon ground ginger, ½ teaspoon ground cumin, and ½ teaspoon ground coriander. Mix to combine.
- Season Chicken: Put 3 pounds chicken wings in a large bowl with the dry rub and toss to coat.
- Prep: Preheat a Blackstone or flat top griddle to a low heat.
- Grill Wings: Drizzle 1 tablespoon extra virgin olive oil on the hot cook top. Put the drummies on first and let cook at a low heat for 3 minutes. Then add the rest of the flat chicken wings. Flip or rotate all of the chicken wings every 3 minutes until their internal temperature reaches 162℉. Drummies cooked for a total of 17-22 minutes and flat wings cooked for a total of 12-14 minutes.
- Rest: Let all of the wings rest for 5-10 minutes.
- Optional Sauce: If you prefer saucy wings, feel free to toss them in your favorite buffalo sauce or barbecue sauce before serving.
- Serve: Enjoy right away with some blue cheese dressing and/or ranch dressing for dipping!
Notes
- Dry Rub: feel free to just season with kosher salt and ground black pepper if you prefer!
- Saucy Wings: after cooking feel free to toss in our homemade buffalo sauce or some bbq sauce if you want – don’t toss in sauce before cooking or the sauce will burn on the griddle and the wings won’t get crispy!
- Cook Top: we absolutely love our Blackstone Griddle but feel free to use any type of flat top griddle for cooking.
- Storage: leftover chicken wings can be kept in an airtight container in the fridge for 3-4 days.
