Coconut Milk Rice 101
Our family loves making rice! We have it with so many dishes (this Garlic Butter Rice is also a fav). This coconut rice puts a really nice spin on your classic rice and is packed with great flavor. It’s the perfect way to switch-up all of your rice bowls, stir-fries, etc. It is ready in only 30 minutes and is made with real, simple ingredients.
What You Will Need
- jasmati rice – this is the type of rice that we used. You could use another type but then you might need to adjust your cooking times.
- full fat coconut milk – provides a great creamy coconut texture and flavor – we love this one!
- coconut water – the liquid needed to cook the rice plus some more coconut flavor.
- coconut sugar – a touch of sweetness.
- pinch of salt – just a bit to help bring out all the great flavor.
How To Store Coconut Rice
Place your cooked coconut rice in an airtight container in the fridge for up to 5 days. Be sure to heat it to piping hot all the way through when warming it up!
What Should I Serve With Coconut Rice?
You can serve coconut rice with just about anything! One of our favorites is Crock Pot Jerk Chicken or just keep it simple with an Avocado + Rice Bowl.
How To Make Coconut Rice
Step one – place all of the ingredients in a medium saucepan, bring to a boil, cover, & simmer for 15-20 minutes.
Step two – fluff with a fork and let it sit off the heat for 5-10 minutes.
Step three – enjoy any way you want!

Ingredients
- 1 cup jasmati rice
- 3/4 cup full fat coconut milk
- 1 cup coconut water
- 1 teaspoon coconut sugar
- pinch of salt
Instructions
- Add ingredients to small saucepan.
- Stir to combine.
- Bring to boil, uncovered, stir once.
- Cover and reduce heat and let simmer 15-25 minutes or until rice as absorbed nearly all the liquid.
- Remove from heat and let stand 5-10 minutes.
- Uncover and fluff with a fork.

- Serving Suggestions: we love serving this with our Slow Cooker Jerk Chicken!
- Coconut Milk: we recommend using the full fat coconut milk from a can here.
