
Strawberry picking was always a staple in my childhood, thankfully. Every season we would drive out to the orchard to pick as many fresh strawberries as we possibly could and then my mom would turn them into all kinds of wonderful things: strawberry jam, strawberry rhubarb pie, strawberry shortcake….. the list goes on and on. Strawberry season also happens to be during the warm months of summer when we are also craving all the fresh veggies in a green salad. So we knew it was time for a super simple strawberry vinaigrette to drizzle on top!

Key Ingredients + Substitutions
- strawberries – highly recommend using fresh strawberries, but frozen will work too. Just be sure to thaw and drain before blending.
- red wine vinegar – we love the flavor that this brings, but you could also try apple cider vinegar.
- lemon juice – don’t skip this secret ingredient! A touch of acidity really helps to brighten up all the flavors.

Storage & Freezer
This simple salad dressing can be kept in an airtight container in the fridge for 4-5 days. To keep it for longer, place it in a freezer-safe container (leaving room for expansion) and freeze for up to 3 months. Thaw overnight in the fridge before using.

Best Ways To Serve Strawberry Vinaigrette
This homemade salad dressing is perfect for any summer salad! Our favorite is our Grilled Protein Chicken Salad + Seedy Granola Crunch. The combination of mixed greens, fresh fruit, tender chicken, a wonderful crunch on top with the sweet dressing is so good! It would also make a great addition to our Strawberry Spinach Salad or Strawberry Chicken Salad!

Description
Our delicious, fresh Strawberry Vinaigrette dressing is made with real, simple ingredients in only 5 minutes!
Ingredients
- 12 large strawberries, leaves removed & cut in half
- 3 tablespoons red wine vinegar
- 1 1/2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 1/2 tablespoon granulated sugar
- 1 teaspoon lemon juice
Instructions
- Blend: Put all of the ingredients in a small food processor or blender. Blend on high until it reaches a smooth consistency.
- Adjust Flavor: Taste the dressing and make any flavor adjustments, as desired.
- Serve: Enjoy on your favorite salad – we love it on our Grilled Protein Chicken Salad + Seedy Granola Crunch!
Notes
- More Sweet: if you prefer a more sweet dressing, simply add more sugar.
- More Tart: to bring a more tart, tangy flavor, add a little more red wine vinegar.
- Frozen Strawberries: we prefer fresh strawberries, but you can easily use frozen too. Just thaw the strawberries & discard the excess liquid before blending.
- Storage: keep in an airtight container in the refrigerator for 4-5 days.

this vinaigrette is gorgeous, erin! i’m seriously digging the color…my mother-in-law would love this. actually, my mother-in-law sounds a lot like your mom! i remember when my hubby would have to leave my house in high school to go home and eat dinner…and then he’d come back afterwards! haha, dinner was always a family event at their house – & still is! xx
