During those warm, summer months we love to bring our cooking outside to our gas grill. After perfecting our stovetop chicken lettuce wraps, we knew we needed to incorporate some grilled chicken in this fun, new spin. Quickly cooking these marinated chicken thighs on a hot grill gives it that perfect flavor and slight char on the outside. Add all the best, simple ingredients on top for a little crunch and flavor. Then a generous drizzle of the soy ginger sauce and you have dinner perfection!

What You Will Need
- boneless skinless chicken thighs – highly recommend these for all the best flavor, but you can also use boneless, skinless chicken breasts too.
- soy sauce – perfect for a quick chicken marinade and the base for the lettuce wrap sauce.
- salt and pepper – simple seasonings that are always a must when cooking any cut of meat.
- chopped green onions – fresh and flavorful topping on this chicken lettuce wrap recipe.
- canned water chestnuts – an essential lettuce wrap ingredient for adding a little bit of a crunch.
- butter lettuce – we love this fresh lettuce for the wrap, but any sturdy leafy greens will work. Romaine lettuce is another great option.
- cilantro – highly recommend this light and refreshing fresh herb.
- crushed peanuts – just pick-up some peanuts at your local grocery store to add even more crunch and flavor.
- fish sauce, rice vinegar, & sesame oil – a splash of each brings all those familiar flavors that compliment the soy sauce so well!
- ginger & garlic – some fresh garlic and ginger always pack a big flavor punch.
- chili garlic sauce – feel free to adjust this amount depending on your preferred spice level.
How To Make Grilled Chicken Lettuce Wraps
The first steps to making this easy recipe are to gather all of the simple ingredients.
Now place the raw chicken in a shallow baking dish or large ziplock bag with a quarter cup of soy sauce. Let them marinate while you prep the rest of the basic ingredients. Then bring the outdoor grill to a medium-high heat and cook chicken over direct heat for about 3-4 minutes per side or until the internal temp reaches 165 degrees F (use an internal meat thermometer).
After letting the meat rest for about 5-10 minutes, cut into bite-sized pieces. Now divide the chicken, green onions, water chestnuts, cilantro, & peanuts on the fresh, lettuce leaves. Drizzle some sauce on top and enjoy!
Storage
Leftover chicken and toppings can be stored in separate airtight containers in the fridge for about 3-4 days. The lettuce should also be kept separate. Warm the chicken and assemble for an easy lunch or dinner mid-week.

Grilled Chicken Lettuce Wraps
- 6 boneless, skinless chicken thighs
- 1/4 cup soy sauce (sub Tamari)
- kosher salt + ground black pepper
- 1/2 cup green onions, sliced
- 8oz chopped water chestnuts, drained
- 1–2 heads butter lettuce
- 1/4 cup fresh cilantro, roughly chopped
- 1/4 cup peanuts, chopped
Soy Ginger Sauce:
- 1/2 cup soy sauce (sub Tamari)
- 1/2 teaspoon fish sauce
- 2 tablespoons rice vinegar
- 2 tablespoons ginger, grated
- 1 teaspoon sesame oil
- 1 tablespoons garlic, minced
- 2 teaspoons chili garlic sauce, more to taste
Instructions
- Prep Chicken: Place chicken in a glass container or reusable silicone bag. Pour 1/4 cup soy sauce over top and ensure chicken is fully coated. Let sit while you prep the rest of the ingredients.
- Soy Ginger Sauce: Place ingredients for the Soy Ginger Sauce in a mason jar; whisk or shake to combine. Set aside.
- Prep Ingredients: Prep remaining ingredients while the chicken marinates for a few minutes and have everything ready to go.
- Prep Grill + Season Chicken: Bring grill to medium high heat (about 400 degrees F) and ensure grill grates are clean. Remove chicken from marinade and let excess liquid drip off. Place directly on the hot grill over direct heat and season with kosher salt and ground black pepper (season again once you flip the chicken).
- Grill Chicken: Grill chicken on direct heat (directly over flame) for 3-4 minutes per side (the bigger/thicker the thigh the longer you will need to cook it), flipping once. Remove from grill once the internal temperature has reached 165 degrees F (use an instant-read meat thermometer).
- Rest + Slice: Remove chicken from grill and let rest 5-10 minutes. Slice into bite-sized pieces.
- Build Lettuce Wraps: Take a piece of butter lettuce and top with a few spoonfuls of chicken. Top with fresh cilantro, green onions, water chestnuts and chopped peanuts.
Notes
- Gluten-Free: use Tamari instead of soy sauce to make this gluten-free.
- Chicken Breast: you can easily sub in chicken breasts here, just adjust the cook time.
- Butter Lettuce: feel free to switch up the lettuce (romaine would also work) here, if you prefer.
