The Best Ham And Cheese Croissants
Melty sandwiches are the best, are they not? And they’re even better when you use a buttery, flakey croissant to bookend warm cheese and ham. This is a great recipe to use up leftover grilled ham after a holiday or when you’re just in the mood for something savory and delicious.

What You Will Need
- croissants – We took the guess work out of this recipe and purchased buttery croissants from our local bakery but feel free to make homemade croissants if you’re up for the challenge!
- butter – Just a bit to spread over the bottom of the croissants to help them crisp up a bit during the warming process.
- deli ham or leftover ham – Both work great! We love leftovers from the best crockpot ham, smoked ham, spiral ham, or our instant pot ham.
- gruyere cheese – We love this rich cheese thanks to it’s slightly nutty flavor and how it melts perfectly on this sandwich. But you could always use Swiss cheese if you prefer.
- dijon mustard & honey – Integral ingredients for any homemade honey mustard sauce.
- mayo – Just a bit to add creaminess.
- lemon juice – Some acid to even out all of the savory and creamy flavors.
- kosher salt – To heighten!
How To Make Ham And Cheese Croissants
Start by assembling your ingredients and preheat your oven to 375 degrees F.

Next, cut your croissants through the middle lengthwise and evenly place the bottom halves on a baking sheet. Then butter the bottom halves with one tablespoon of room temperature butter. Place three ham slices on each croissant half, followed by three slices of cheese.

Butter the cut side of the top half of each croissant and place it on top of the meat and cheese topped croissant to make a sandwich. Melt the remaining 2 tablespoons of butter and brush it over the top of each sandwich. For best results, cover the entire pan with foil, being sure to pinch it around the edges of the pan so that it’s secure. Then place the pan in the preheated oven and let your delicious ham and cheese sandwiches bake for 15-20 minutes.

While your savory croissants bake, mix together all of the honey mustard ingredients into a small bowl.

Carefully remove the pan from the oven, remove the foil, and brush the tops of the croissants with the reserved melted butter. If you’re using poppy seeds, this the time to sprinkle them over the top, creating a truly elegant sandwich and a finishing touch. Return the uncovered sandwiches back to the oven for 2-3 minutes. Serve these golden brown sandwiches with your honey mustard sauce for dipping and enjoy!

Ingredients
Ham and Cheese Croissants:
- 4 large croissants
- 4 tablespoons butter, divided (regular or plant-based)
- 12 slices deli ham or leftover ham
- 8oz gruyere cheese, sliced
- optional topping: poppy seeds
Honey Mustard Sauce:
- 1/3 cup dijon mustard
- 4 tablespoons honey
- 1 1/2 tablespoon mayo
- 1/2 teaspoon lemon juice
- pinch of kosher salt
Instructions
- Prep: Preheat the oven to 375 degrees F. Cut croissants in half, lengthwise, to create a top and bottom for making a sandwich.
- Fill Croissants: Place all of the croissant bottoms on a large rimmed baking sheet. Use 1 tablespoon of softened butter to butter the bottom halves. Place 3 slices of ham on each croissant and then 3 slices of gruyere cheese on top of the ham. Use another tablespoon of softened butter to butter the croissant tops and place them on top of the cheese.
- Brush + Bake: Melt the remaining 2 tablespoons of butter and brush some on top of the croissants; reserve the remaining melted butter for later. Cover the entire pan with aluminum foil and pinch around the edges to secure. Bake in the preheated oven for 15-20 minutes or until cheese is melted.
- Make Sauce: While the croissants bake, put all of the Sauce ingredients in a small bowl and whisk to fully combine. Set aside.
- Finish: Remove the pan from the oven, remove the foil, and brush the croissants with the reserved melted butter. If using poppy seeds, sprinkle them on top at this time. Return the sheet pan to the oven to bake, uncovered, for 2-3 minutes.
- Serve: Enjoy these croissants with the honey mustard dipping sauce!
Notes
- Dairy Free: simply use a plant-based butter and a dairy-alternative cheese.
- Storage: highly recommend enjoying these sandwiches right away, but you can place leftovers in an airtight container in the fridge for 2-3 days. Reheat in the microwave or oven.
