Description
Pumpkin Overnight Oats – perfect for Fall this easy, make-ahead breakfast is easy and delicious!!!
Ingredients
- 1 medium banana, mashed
- 1 1/2 teaspoon vanilla extract
- 1/2 cup unsweetened almond milk
- 1/4 cup +3 tablespoons pumpkin puree
- 1 tablespoon maple syrup
- 1 tablespoon chia seeds
- 1 cup rolled oats
- 2 1/2 teaspoons pumpkin pie spice
- 1/4 cup dairy-free chocolate chips (optional)
- pinch of salt
Instructions
- Place banana in medium bowl and smash with fork until smooth.
- Add vanilla extract, maple syrup, unsweetened almond milk and pumpkin puree.
- Stir until smooth.
- Add oats, chia seeds, pumpkin pie spice and salt; stir to combine.
- Stir in chocolate chips.
- Pour into covered storage container and place in fridge.
- Let sit for anywhere from 30 minutes to overnight.
