Enter this amazing smoked turkey wing recipe! A great option for enjoying all the best turkey flavor without making a whole bird. It only takes minutes to mix together the dry rub seasoning and get these turkey wings on the smoker. Just serve up with your favorite side dishes for a delicious dinner!

What You Will Need
- turkey wings – just pick-up some fresh wings from your local grocery store and make sure they are fully thawed.
- olive oil – rub down the outside of the turkey wings to get that wonderfully crispy turkey skin.
- kosher salt and ground black pepper – simple seasoning that are always a must when cooking any type of meat.
- dried thyme, ground mustard, garlic powder, dried parsley, dried oregano, dried basil, dried sage, and onion powder – love this combination of spices noted in our recipe card below, that you probably already have in your pantry!
How To Cook Smoked Turkey Wings
The first steps to making this easy recipe are to put all of the seasoning ingredients in a small bowl and mix together. Place the thawed turkey wings on a large baking sheet, pat dry with paper towel, rub the outsides with olive oil, and then coat the wings with the spice rub.
Place wings directly on the hot grill grate of the preheated smoker at 225 degrees F. Let them smoke for 1 hour 15 minutes to 1 hour 30 minutes of cooking time or until their internal temperature reaches 160 degrees F (use a meat thermometer).
Once they are fully cooked, you have the option to place them on a hot gas grill to sear for 1-2 minutes. The sear will give you some nice char marks, plus crispy skin. This is just an option and not necessary, up to you.

Ingredients
Turkey Wings:
- 6 turkey wings, thawed
- extra virgin olive oil, sub avocado oil
Herby Turkey Dry Rub:
- 1 tablespoon kosher salt
- 1/2 teaspoon ground black pepper
- 2 teaspoons dried thyme leaves
- 1 teaspoon ground mustard
- 1 teaspoon smoked garlic powder
- 1 tablespoon dried parsley leaves
- 1 teaspoon dried oregano leaves
- 1 teaspoon dried basil leaves
- 2 teaspoons dried sage leaves
- 1 teaspoon onion powder
Instructions
- Prep: Preheat smoker to 225 degrees F. Place the turkey wings on a large baking sheet and pat dry with paper towels. Drizzle turkey wings with olive oil and rub into all the nooks and crannies.
- Dry Rub: Place all the dry rub ingredients in a small bowl; mix to combine. Use this dry rub to coat the outside of the turkey wings.
- Smoke: Put the seasoned wings directly on the hot grill grates and smoke for about 1 hour 15 minutes to 1 hour 30 minutes or until their internal temperature at the thickest part of the wing reaches 160 degrees F (use an instant-read thermometer).
- Sear: Bring your grill to HIGH heat and ensure grill grates are clean. Transfer turkey wings and sear 1-2 minutes or until char marks form.
- Rest: Let the meat rest for about 5-10 minutes, during this process the internal temp will reach the desired 165 degrees F.
- Serve: Enjoy with any of your favorite side dish recipes!
Notes
- Dry Rub: highly recommend using our quick and easy smoked turkey dry rub recipe, but you can also use your favorite store-bought version.

- Sear: if you don’t have a grill – you can easily do this in a cast iron skillet, under a broiler or you can bring the smoker up to 450 degrees and sear right on the smoker (it just takes a bit of time for it to come up to temp).
